It's Still Summer

Even though we are in week two of classes, the weather reminds me that we have three more weeks of summer. As it is so hot, all I want is cold food.

On Sunday, I made Oat Bran Zucchini muffins, which I keep in the fridge and eat cold in the morning for breakfast.
 Cold lunch of champions: pickle, carrots, eggless tofu sandwich with spinach.
 Spectacular melon and pineapple.
 The last of the tostadas. Beans, green chile, avocado, Better Than Sour Cream, shredded lettuce.
 Walks with the boy and city water pipes with a sense of humor.

Catching Up

It was a crazy week! Here is a little photo dump of food and such:

 This weekend, I picked up more fruit as it is so hot and I can't handle much else! The pickles were on sale, so I went for those, too.
 Also, my recent Etsy sticker order came in. I'm practically willing fall (or at least fall weather!) into starting soon!

More of the same types of meals on deck for this week. I have one more serving of tacos and one more of tostadas, so you might see some of that! More salads. More corn. More sandwiches. It's August, so that's how it goes! Ha ha! I hope you've have a great weekend.

Thrown In

No more time to adjust - it's sink or swim! Chaos will reign the next three days, so I tried to enjoy my weekend.  Here are the fruits of that labor:
 On sale, and absolutely delicious.

Farmer's Market sunflowers:
 Market results: zucchini, corn, peaches, and homemade strawberry jam (it's so good!)

In the backyard, I've had tons of butterflies fighting the bees for zinnia nectar.
 I made a final batch of gazpacho - but with the intent to share. I took this portion to Mom & Dad, and they approved.
 La Croix, you need to pay attention: this pineapple seltzer water is fantastic!
The first day of classes is tomorrow, so obviously the politicians who run public education calendars don't consult science/phenomena. It doesn't matter.  We'll take the students outside, and let them burn their retinas. (I'm kidding - science teachers will take care of that.) Happy Eclipse watching!

In the Middle

It's only day three, but the work week is challenging me in every facet! Remy is also unhappy about the schedule change. Lots of whimpering and laying on my feet as I get ready in the morning.
 Meals have included tostadas (beans, green chile, Tofutti sour cream, lettuce)
 Seitan, avocado, spinach, tomato, and Just Mayo sandwich. Watermelon and pineapple.
Lots of meetings, as well as cleaning, organizing, and sweating in the classroom.

It's Officially Over

I considered Friday my last day of summer break, as this weekend has been busy seeing a few more people and also prepping for the transition ahead.

I'm going to be "on a break" from avocado toast for a while, as I've had it so often for breakfast.

I had my annual physical, and I asked my doctor about taking this when I was feeling stressed out during the school year. I've seen it pop up in a few places, both in person at Natural Grocer's and in lifestyle blogs.
She said it couldn't hurt, but I probably get enough magnesium in my diet. She did recommend that everyone, vegan or not, take Vitamin B Complex, as it helps with everything from stress, brain and heart function, to skin and nails.  I spent a bit of money ($22) for a high quality formula, and have taken it twice - we'll see if I notice a difference!
 Lastly, some groceries from the Farmer's Market and also King Soopers. I'll be sure to share how I use it this week in meals!

I'm satisfied with my break, and am hopeful for the upcoming school year.  Thank you for letting me share my summer with you! I'll see you on Wednesday with the work week update.

Muscles and Treats

With the exception of the two weeks I was out of town, every week this summer I completed six workout classes. During the school year, I vacillate between one and four classes a week, so this was a big accomplishment. I'm stronger, leaner, and excited to keep the momentum going into the fall.

Each week, the schedule included two yoga classes:
 Three HIIT classes (two circuit and one kettlebell)

 And one spin class.
The school year consisted of entirely spin or spin/HIIT combo classes. The addition of circuits has been key in my upper body strength. Tricep dips were always hard, and now they are getting easier.  I'm still doing pushup from the knee, but I can chaturanga (or knees-chest-chin) much better, which is exciting!

My plans for the fall include four to five classes a week: two circuit, one spin, one spin/HIIT combo and if possible - one yoga class. I might rotate in a spin/yoga combo for a circuit class on occasion.

And now for the treats over the last few days:
 Yes, I watched the Bachelorette finale with half of a small watermelon and a spoon. I did share with Remy. He, too, was shocked at Rachel's choice (I didn't like Peter, but he was clearly her favorite.  I don't think Bryan will last).
 No arguments from me, Beet Box! Chocolate glazed Pumpkin Donut, accompanied by an unseen Iced Bhakti Chai.
I went in for an Apple Cinnamon scone, but they were selling a savory chive scone instead that I didn't trust. Ha ha! The donut was delicious, though, so it all ended well.
