Yeeeeessss! Summer produce is the best and it looks like you've been enjoying a beautiful bounty! I'm not a huge fan of cold soups but I'm wondering if maybe it would grow on me too. Yours does look delicious. I'm all about those berries and grapes though!Hope you have been enjoying your summer so far!
I wasn't a fan until I made gazpacho last year, and loved it! If you like the ingredients in this one, I suggest you make a 1/4 of it and see if you like it!I can't believe we are approaching the half way point. Nooo!! Slow down, summer!!
I need the watermelons to get ripe now..!! Haven't found a really good one yet and the berries around here (even not organic) are always rather expensive given i will eat a pint in 24hrs easily...! It's weird i like exactly almost three chilled soups- and i have tried countless others that just didn't click for me. Both the salmorejo and chickpea tahini soup sound delicious! I will definitely have to give them a try!The berries are insanely priced, and I just can't bring myself to buy conventional berries - and organic are even more expensive. Bring on the watermelon, though! I'm ready!
I just made some salmorejo this morning! I love gazpacho but it leaves me hungry about an hour later...! I find with the bit of bread and more olive oil in salmorejo helps keep me full longer with a good size bowl :)) I literally just bought a small local organic watermelon this afternoon- i was out for dinner and will cut it up first thing in the morning, crossing my fingers it's a good one! Ironically, Unknown got me into Gazpacho. I never had an appreciation. Your's look beautiful. Chunky is better than pureed, IMO.
I love gazpacho - there's about two weeks when the veggies are in season and the weather is good enough to eat it over here, but it's definitely a summer favourite. As is cantaloupe - bring on the melon!
