Early Summer Eats

That's right folks: early summer, as I haven't broken into a melon just yet. I'm finishing off all the berries I can handle and once it is July - game on, watermelon and cantaloupe!
 
Even strawberries in my cabbage and kale salad. 
 Because I don't know how to make my own gazpacho recipe - I use this one, and it requires these items:
 Yum!
I eat it with saltines. 

I wasn't always a fan of cold soup, but this has grown on me. Do you eat gazpacho or another chilled soup?

  1. Yeeeeessss! Summer produce is the best and it looks like you've been enjoying a beautiful bounty! I'm not a huge fan of cold soups but I'm wondering if maybe it would grow on me too. Yours does look delicious. I'm all about those berries and grapes though!

    1. I wasn't a fan until I made gazpacho last year, and loved it! If you like the ingredients in this one, I suggest you make a 1/4 of it and see if you like it!

      I can't believe we are approaching the half way point. Nooo!! Slow down, summer!!

  2. I need the watermelons to get ripe now..!! Haven't found a really good one yet and the berries around here (even not organic) are always rather expensive given i will eat a pint in 24hrs easily...!
    It's weird i like exactly almost three chilled soups- and i have tried countless others that just didn't click for me. Gazpacho, salmorejo, and this delicious one that tastes like hummus and a greek salad had a baby :)) really creamy and smooth, just omit the feta and use a few more olives (any kind of fancy olives , not those generic canned black olives)

    1. Both the salmorejo and chickpea tahini soup sound delicious! I will definitely have to give them a try!

      The berries are insanely priced, and I just can't bring myself to buy conventional berries - and organic are even more expensive. Bring on the watermelon, though! I'm ready!

    2. I just made some salmorejo this morning! I love gazpacho but it leaves me hungry about an hour later...! I find with the bit of bread and more olive oil in salmorejo helps keep me full longer with a good size bowl :))
      I literally just bought a small local organic watermelon this afternoon- i was out for dinner and will cut it up first thing in the morning, crossing my fingers it's a good one!

  3. Ironically, Unknown got me into Gazpacho. I never had an appreciation. Your's look beautiful. Chunky is better than pureed, IMO.

  4. I love gazpacho - there's about two weeks when the veggies are in season and the weather is good enough to eat it over here, but it's definitely a summer favourite. As is cantaloupe - bring on the melon!
