Early Summer Eats

That's right folks: early summer, as I haven't broken into a melon just yet. I'm finishing off all the berries I can handle and once it is July - game on, watermelon and cantaloupe!
Even strawberries in my cabbage and kale salad. 
 Because I don't know how to make my own gazpacho recipe - I use this one, and it requires these items:
I eat it with saltines. 

I wasn't always a fan of cold soup, but this has grown on me. Do you eat gazpacho or another chilled soup?

Day Trip - Kansas Edition

I scheduled my last post, as I was already in Kansas by Wednesday evening.  Thursday we spent with Grandma, running errands in the nearest city and trying to escape the 101 degree plus humidity heat.  Remy was planted in the air conditioned hotel, while I was riddled with "mom guilt" for leaving him in a new place, all alone (albeit way safer than outside).  Friday, we hit our destination: Lindsborg, KS.  It is about three and a half hours away from Grandma's small town, and it is called the Swedish capitol of Kansas.
I had one mission: purchase a Dala Horse (traditional Swedish folkart, hand painted wooden horses according to the region of one's origin).  My grandfather, who passed in 2014, had quite a few in the house but my grandmother in her mass purge (read: grief) gave them all away.  And I wanted one for my bookshelf. 

The store where all of the magic happened was called Hemslojd, and had a large statue of St. Lucia (Swedish Christmas tradition) out front.  P.S. Friday was in the 70s, with a cool breeze and occasional rain. Everyone was grateful, and Remy was able to join us and wait outside with my Dad while I shopped.
 They also had an extensive Christmas section with adorable figurines.

My purchases: (brochure was complimentary), dala horse, magnet, mug. In Swedish: "help yourself" or "you are welcome to it" - as in coffee, the national beverage.
They have Dala Horses all over town (I only photographed my favorite).

 Art on buildings:
 London has red phone booths - Sweden has Tala and yellow phone booths.

They have a Swedish festival in the fall. Perhaps one day I'll make it back to Lindsborg, and also back to Sweden (because my only other trip was with the aforementioned grandparents when I was five).  We returned on Saturday, and I'm already feeling the vacation blues.  Good thing there is another trip on the horizon... stay tuned! ;)   But first, I'll see you on Wednesday with the usual mid week wrap up.

It's hot. Between the workouts and outside - all I want to do is eat ice cream.

And sometimes I do, but otherwise I try to get in the necessary nutrients (in cold form).
 Kale, cabbage, carrot, mandarin orange, slivered almonds, and pan seared tofu salad.
 Not my best gazpacho. Recipes exist for a reason! Ha! I'll make a better batch next week.

Revisiting the Favorites

I made sure to revisit some of my favorite places towards the end of the week, and over the weekend.  One stop was Rosenberg's Bagels. Onion bagel with tofu cream cheese. Coffee.  They have improved their cream cheese since my last visit!
 I finally made it to a Farmer's Market! No purchases, just perusing the vendors.
 Whole Foods (or should I say "Amazon") was selling the elusive vegan tamale. Green chile, corn, and onion.
 Beet Box run to include a beet brownie and apple cinnamon scone.
It's going to be hot this week, so I'm looking forward to cold meals! See you on Wednesday!

As you've guessed by the title: this post is all about hedonism. Ha! Here are my indulgences as of late:
 Above: actually not that great Theo chocolates. Below: the absolute best non-dairy ice cream I've ever had.  As in, better than specialty ice cream shops.
 Verdict: Soy Iced Chai > Almond Iced Chai.
My pamper day yesterday included a massage (this photo is post session). 
 And hair salon visit. I love Aveda products and their scent!

I should also take a picture of my bed, as I've been able to sleep seven hours or more a night.  During the school year, I really struggle to get six.  How much are you sleeping? I'm not sure I should classify regular sleeping hours as an "indulgence", but in our society of go-go-go, maybe it is...

Activities & Results

As we ended Wednesday's post with the flower shop - here are the results (Zinnias) in the ground:
Thursday, I went to the Tom's Warehouse Sale with a few colleague friends:
 I purchased the least, but somehow still feel like I bought too many!
Friday and Saturday I got in my workouts, and spent time catching up with a friend. Otherwise, I've been watching Orange is the New Black, trying to pace myself. Last season was so intense, I didn't know what to expect! 

For my last activity, I've taken my time at the grocery store and Trader Joe's.  While I was at TJ's, they were in the process of restocking and moving around items in the frozen section, so I couldn't tell if our beloved Mandarin Morsels or Chickenless Strips were back. Instead:
I've purchased the peas before, but the acai packets, wild bluerries, and tots were all new purchases! There were other items: coconut creamer, almond milk, bread, lemons, and hummus - but you've seen that before!  The week ahead includes a pamper day, more workouts, catching up with friends, and planning my upcoming trip to Kansas.  See you on Wednesday!

Hello, Summer!

It's official, and I believe it - the summer routine has kicked in, and I am finally well slept! Hooray for summer! As mentioned on Sunday, I've been enjoying yoga, kettlebell, and cycle-HIIT classes in the mornings, which means that breakfast is late.
In alignment with summer meals: my first iteration of pasta salad for lunch. 
 Pasta, broccoli, red bell pepper, garbanzo beans. Dressing: Italian seasoning, salt & pepper, water & olive oil.

For the last time: Boca Chik'n Patty atop romaine salad mix, cabbage & kale salad mix, and sweet onion dressing.
 These past three days have included errands, time with Mom, and yard work. Flowers are in the ground, and here is my helper taking a ride in the cart at the floral shop.

Time for a Treat

On Friday, I left the 2016-2017 school year behind me, and headed straight for Sweet Cooie's. Vegan Peanut Butter Oreo.
 It's been a while, and I'm afraid to say this is no longer a treat: Native Foods has really gone downhill in their quality. The reuben was crumbly and tasteless.  I miss their old menu items, and probably won't be back.
 Other meals this weekend featured the same salads with a Boca Chik'n Patty, but I only have two left (I bought them on sale two boxes for $5), so I am moving on to other salads soon. Ha!

Activities from the last few days included naps, a friend's birthday party for her two kids, and a tea hosted by another good friend.
Plans for week one of summer: planting flowers and general gardening, yoga, HIIT workouts, cycle classes, time with Mom, Tom's Warehouse Sale with colleague friends (as in Tom's shoes, not the toothpaste/deodorant Tom's brand!), and whatever else comes my way - including lots of face time with my fur child. I will stick with my Wednesday/Sunday posting schedule but will make them mostly a highlight reel.
