This Week

Still on the avocado toast with nooch and Everything But the Bagel Sesame Seasoning train. Everyday. Served with coffee and coconut creamer.
Lunches this week: TJ's Masala Burger with steamed kale; Steamed lentils, green beans, and rice pilaf. 
 
 Dinners have been on repeat: Cabbage and kale salad
 Or Pasta Con Ceci
 Or half a baked potato and steamed kale with miso gravy.

I hope you all have had a great week! Prom and Easter this weekend, so I'll be back with highlights!

  2. Oooh yes! Save me a seat on the avocado toast train for after Passover :) Your school lunches always look amazing, no wonder your coworkers are always envious of your meals. Pasta con ceci sounds amazing, even though it is warming up soup still sounds great. The baked potato dinner is lovely, I have to try that gravy!

    I hope that prom goes smoothly and that you have a wonderful time with your family for Easter!

    1. I'm forcing myself to take a break from the avocado toast this week, as I don't want to get sick of it! Ha ha! It's so good.

      I'm in a soup phase right now, despite the warming weather...not sure what that is about! Ha ha!

  3. Avocado toast daily sounds fantastic! I can never time multiple avocados the right way so i just get one at a time. Those masala burgers are one of my favorite veggie burgers of all time, although i like them best on a salad and not in a burger bun since they are so potato-y. Your dinner salad sounds delicious! I love adding salted sunflower seeds to salads, adds the right amount of crunch and touch of salt that i crave

    1. I buy two avocados at a time, so if one is bad - I can chuck it. If the first one is good, and the second one looks ready too - I pop it in the fridge, and it'll stay ripe for another week.

      Sunflower seeds have been a great addition, and I agree about the Masala burger!

  4. I second Unknown, so lucky you're finding good Avocados. Gotta have a backup plan every time you slice one open.

    'Meals on repeat' means dont mess with success!

  5. You've reminded me again I need to make pasta con ceci -- why don't I have a bowl of that right now? Or some avo toast. There's never enough of that in the world.
