Just Dinner

Uninspired by cooking dinner this week, I've fallen into a rut. Suggestions are welcome, and with Cinco De Mayo around the corner - I smell tortillas and avocados on the grocery list.

Monday: running errands, cranky, and skipped my workout class. Snarf's veggie sandwich.

 Tuesday: in a rush (I met a few friends to go bowling...hilarious, as I haven't done that in ages), so I picked up a sparse salad at Whole Foods (they were replenishing the salad bar, so half of it was empty!) with Just Ranch and way too many pretzel crisps.

Wednesday: 45 minute spin class and the last of the lentil vegetable soup and corn muffins. I didn't actually finish the soup in the bowl, but I'm calling it "close enough" and sharing the remainder with the squirrels. Ha!

Our weather has been much cooler the last two weeks, and so I think that is throwing my spring menu inspiration. Tell me what you're eating, and inspire me!  See you this weekend!

  1. The Snarf sandwich looks fantastic ! And having fun bowling certainly beats about anything else. It's been cold and rainy in nyc the past few days- yuck. I made a quick meal from trader joe's japanese fried rice and added in more edamame and some shredded carrots, side of sliced cucumbers with furikake. And made my favorite peanut butter tofu recipe sunday night, i double the sauce to have leftovers to use on roasted veggies and rice or whatever. It's this recipe- best with natural style peanut butter, i like the stuff from the pb machine at whole foods for this but it's not as super smooth as pb from a jar if that matters to you. Note the recipe has too much soy sauce ! Use 1TB and then taste before adding more

  2. It's been cool and rainy here in SLC too. I've been eating lots of soups and potatoes. I've been craving warm, comfort type foods. I made homemade pupusas with guacamole yesterday which turned out great.onight I'm attempting to veganize a creamy mushroom pasta recipe I saw on the back of a box of pasta.

  3. Yup, cold and rainy here on Long Island as well. My inspiration goes up and down but the other night I had a salad with a whole romaine heart, some slivered almonds, cranberries and Gardein Crispy Tenders and it was so satisfying! I'm also been enjoying my stir fries and I have a Mexican Salad coming up probably tomorrow night :) That will have romaine, corn, black beans, tomato and some rice and the dressing will be the mashed avocado and salsa. It'll probably look disgusting when I mix it all up but I'm sure it will be delicious! Hope that helps ;)

    I love the name Snarf's!! I can't stop chuckling at that. The sandwich looks great and even though the salad is sparse it looks yummy.

    1. Oh and bowling sounds so fun! I feel like one day we should have a big blogger meetup/potluck and do it at a bowling alley hahaha!

    2. The bowling was so bad. Ha ha! Strikes or gutter balls - rarely anything in between. A blogger meet up/potluck in a bowling alley would be awesome!

      I'm definitely going to ride the Mexican food train this week. A salad would be healthier than enchiladas, but will it be as delicious. ;) Ha!

  6. It's really annoying when you get into a cooking rut. The Whole Food salad and chips combo still look good to me, even if the bar was empty. At least they left some good bits for you!
