Spring Break Part 2

Productivity reigns! Prior to emissions testing, DMV... breakfast from Whole Foods. Almond milk latte and tofu, potato, and chile breakfast burrito.

Filing taxes and running errands means I can't be bothered to cook.
 

But there must be a little fun, and so I caught up with Frankie's Mom while we drove over for carrot ginger juice.
 

Accompanied by other efforts of health with a couple of tough workout classes and kale chips.
 

A quick trip coming up - to be detailed on Saturday! See you soon...

  1. Your kale chips look so delicious. I think dehydrators are much better than ovens when it comes to kale chips!

    1. These kale chips are so delicious! I definitely agree that dehydrator kale chips are far superior to store bought.

  2. Sounds like a great break with a good combo of fun and productivity! That meals looks like a perfect way to fuel a trip to the DMV. Hopefully it wasn't terrible! Everything looks simultaneously healthy and comforting which you really can't beat. Nice that you got to catch up with Frankie's mom and those kale chips look great!

    1. I can't believe how quickly it has gone! A welcomed rest, to be sure! Frankie's Mom is challenging a lot of the time, so I don't spend too much time with her - ha ha! But I'm glad I "put in some time" so I can now have some time "off" . 😉

      A super quick 48 hour trip, somewhere I've been before....that's your hint!

  3. That WF breakfast sounds great to me! Vegan breakfast burritos need to be more common- everyone else would have a productive day too ;) that juice is such a great color! I recently had kiwi juice for the first time (although not so much a juice as just pureed kiwi with some lemon), it's a crazy bright green color and needs to be more popular here asap.

    1. A hot bar with tofu scramble is tough to come by, and sometimes I enjoy their oatmeal bar - but they make up for it in the breakfast burrito!

  4. Very productive indeed - taxes is noone's idea of fun, so you definitely deserve some good food to make up for it. Kale chips look fab too.

  5. I dont know what kind of car you drive, but back in Virginia, I had a mini Cooper and the dealer performed the yearly emissions and safety check when doing the tune-up. Great service.
