Short Weekend

Yes, I'm missing that extra hour! My internal clock has not yet adjusted, and I keep thinking it is earlier than it really is!  The weekend was also short because I was very busy painting my living room and catching up with family. While I was painting, I decided to go through my book shelves and am donating 33 books to Goodwill. Holy moly!  Here are a few images from the two days:
 Finished off the sloppy joe's - I need to stop making full recipes. Ha ha!

I made the Orange Macaroon Smoothie recipe from last Sunday's post. (Vega Coconut Almond, orange juice, banana, ice).  No, it does not taste like an orange macaroon. Lies!
 I've wanted to try cooking with coconut oil, but wanted something that required less commitment than $10.  I'm excited to use these packets!
 Lesson learned from last week: three days of lunches.  TJ's Vegetable Fried Rice (which I cooked in the coconut oil!), tofu with Soyaki, and chopped asparagus. I will mix them all together, but for re-heating purposes, this is faster.

  1. I love cooking with coconut oil. I also use it for my skin. Trader Joe's sells jars of it for under six dollars. It's the best price I've found yet. Your lunches look tasty! Hugs to Remy!

  2. I've seen those packets too! I haven't tried them yet though. How much comes in each little packet?

    I love the sound of that smoothie, how sad it didn't taste like an orange macaroon. I would love to find a good vegan creamsicle smoothie recipe. I'm thinking orange juice, banana, vanilla extract and frozen vanilla almond milk might work?

    I know how you feel, if I prepare too much of something I get so sick of it. Most of the time by the end of the week I just want it to go away, haha. I hope you've been able to adjust to the time change! I actually took a nap yesterday because I was so off and I NEVER take naps!

    1. A tablespoon comes in each packet! I've just used the one, but I intend to cook more today, and try another one.

      It is a good idea - but the orange basically disappeared, and it just tasted like Vega powder (which isn't horrible!).

      I'm with you - if there is a nap involved, there is some serious exhaustion at play!

  3. You'll love the coconut oil! I usually buy the jar from TJs which is much cheaper than about anywhere else, but last time i ordered from amazon they had a good deal on it. I made coconut oil fudge once- it's amazing and literally melts in your mouth! Basically just coconut oil, cocoa powder and some sweetner mixed together and chilled til firm
    Was the smoothie good even if it didn't taste like an orange macaroon? That flavor of vega sounds fantastic, but i still have a lot of protein powder to use up before i buy a new tub

      Yes, it was still tasty - as that Vega flavor is good, but I was hoping for more orange flavor! Maybe I'll increase the orange juice next time...

  4. Oh yeah coconut oil is great. It's pretty subtle and not too overwhelmingly coconutty. Sounds perfect with fried rice.
    the smoothie looks good at least. I love how Vega blends up. I kind of impulsively bought smoothie powder recently thinking it was protein-y but it's not really, it's just a berry blend that's high in antioxidants. It's the amazing Grass brand, which is good but I should have stuck with high protein Vega.

    1. I've made a purchase like that before, and there is definitely a long time between Vega purchases - like a year! Ha ha! I was excited to be out of the vanilla and try something else!

  5. No Daylight Savings Time in the VI. We are now back in sync with the mainland. Oh how I hated losing that hour every spring.

    When moving down here I dropped all my books in those book depository bins (like Goodwill bins). Wish I had thought to donate to Goodwill instead. Maybe that's where they end up.

    Coconut oil is great for your skin. The Mr. uses it to make Popcorn.

    1. The Virgin Islands are smart. We really should end Daylight Savings altogether.

      This one I donated to, I have purchased books from previously. It has the nickname of the "Good Goodwill" as they are decent stuff a lot of the time.

    2. I was surprised at the cool stuff in the Goodwill where I dropped off things when I moved down here. Got another pet carrier for $10, can never have too many.

  6. I find coconut oil's really good furniture polish too (though clearly a bit on the expensive side for a regular foray into wood greasing!) Sloppy Joes look fab - something I don't make nearly enough!
