Spring Break Part 2

Productivity reigns! Prior to emissions testing, DMV... breakfast from Whole Foods. Almond milk latte and tofu, potato, and chile breakfast burrito.

Filing taxes and running errands means I can't be bothered to cook.

But there must be a little fun, and so I caught up with Frankie's Mom while we drove over for carrot ginger juice.

Accompanied by other efforts of health with a couple of tough workout classes and kale chips.

Spring Break Part 1

Three posts coming to you this week! Spring Break is the last respite before the nine week countdown to summer vacation. It's going to be productive, but with lots of sleep (I'm already averaging 8 hours or more the last couple of nights, and an afternoon nap. It's clear that I'm tired. Ha ha!).

We've had a true representation of spring this weekend with one warm day, and one cool day. Yesterday, I enjoyed my post-workout smoothie al fresco.
Vega Coconut Almond, frozen banana, frozen mango, juice of two oranges and water.

When it's nice outside, I want a sandwich.
From City Bakery Cafe, a build your own veggie sandwich on ciabatta (roasted red pepper hummus, avocado, tomato, red onion, cucumber, lettuce).

Today was much cooler and rainy outside, which means snuggles and a nap with my little guy. He's doing well, still rotating active days with rest days, some days crated, some days not.
 And a nice big baked potato to warm me as well.

Transition to Spring

I'm trying to bring more salads back into the rotation, now that we've officially begun spring! I turned the following:

Week in Review

I had full intentions of posting on Wednesday, but I was really busy that afternoon and evening. My friend who is receiving chemo mentioned that her boys love fried rice (that was also the real reason why I tried the TJ's fried rice when I did!), so after work I came home and cooked, taking it to her that night.
 While I was cooking, Remy was at the groomer's.  His groomer for five years left, so we had to try a new gal. Very nice, but she shaved his snout all the way down and it looks weird. Good thing I still love him. Ha ha! Yes, she gave him a St. Patrick's feather, too!
 Once we were home from there, I needed to cook lunches for the rest of the week.  Mushroom & Herb couscous, marinated tofu, and steamed broccoli.
 I chose to go to bed after all of that, instead of posting - but I'm hoping you'll forgive me!  Here's what I was eating for breakfast most days:
 Yesterday and today, we are having a summer preview:
I pulled weeds, cleared the flower bed, swept the patio, and pulled the furniture out of storage:
 Before you become too jealous - know that we are extremely dry, and approaching drought! All I do is drink water, and put on lotion and lip balm.  Remy has started Omega 3s because his skin is so dry, and we've already had a month of wildfires.

 I've seen my Mom twice since my birthday, but never remember to return her vase. She suggested that in the interim, I fill it with flowers. So, I did!
 I realized this morning that I haven't talked about this coconut creamer - it's so good!
No craziness on the schedule for this week, so I can definitely pop in on Wednesday. Hope you've had a wonderful weekend!

Short Weekend

Yes, I'm missing that extra hour! My internal clock has not yet adjusted, and I keep thinking it is earlier than it really is!  The weekend was also short because I was very busy painting my living room and catching up with family. While I was painting, I decided to go through my book shelves and am donating 33 books to Goodwill. Holy moly!  Here are a few images from the two days:
 Finished off the sloppy joe's - I need to stop making full recipes. Ha ha!

I made the Orange Macaroon Smoothie recipe from last Sunday's post. (Vega Coconut Almond, orange juice, banana, ice).  No, it does not taste like an orange macaroon. Lies!
 I've wanted to try cooking with coconut oil, but wanted something that required less commitment than $10.  I'm excited to use these packets!
 Lesson learned from last week: three days of lunches.  TJ's Vegetable Fried Rice (which I cooked in the coconut oil!), tofu with Soyaki, and chopped asparagus. I will mix them all together, but for re-heating purposes, this is faster.

Follow Through

As promised, here I am! Ttrockwood correctly guessed - the buns were used to house sloppy joes! I had a memory from childhood, and decided to live it out:
 Manwich is not very good, so I had to add barbeque sauce to make it manageable. Oh well!
Lunches this week: Homemade Sweet & Sour bell peppers, onions, pineapple, garlic, and tofu with broccoli and jasmine rice.  I'm already sick of it, but have two more days to go. Ha!
 PB Banana breakfast toast:
 Monday night, my cousin and her two year old daughter invited me to dinner at ModMarket (her husband travels for work a lot, so adult companionship is at a premium!).

Back to Life

Or at least an attempt at a normal posting schedule of Wednesdays and Sundays. Ha!  It has been two weeks since I last posted, although it wasn't a full disappearance, as I was still reading and commenting. Life has been a lot lately!  Images from this time, and a few stories to go with them:
 Lunches one week included: Roasted Sweet Potato Quinoa salad (based on this recipe, but with a few swaps), cocoa almonds and blueberries.

Less exciting lunch the following: Mushroom & Herb Couscous with steamed broccoli:
A colleague friend has just begun chemo and radiation for breast cancer. Wednesday it was my turn to take her five person household dinner. She is a vegetarian, but her Mother, husband, and two elementary aged boys are not. She assured me I could trade in tofu/plant protein as she does it all of the time.  I brought Whole Food's Vegetable Barley Soup (her favorite), Saltines & Jell-o (mostly for her upset stomach, or the boys as desired), and the prize winner: mini tofu pigs in a blanket.
 I am on the calendar again in a week and a half, so I need to be equally impressive.  She is stage one, it's not in her bones, and will be done with treatment (and praying to be cancer-free) in five months.

This recipe sounds awesome:
 That little guy in the background recently turned 9 years old.  It has been a rough six weeks for him, as we ended up at the vet in late January with a diagnosis of spinal disk disease. We've caught it early, but he had to endure one month of forced rest (crating during the day, no walks, potty time on a leash, no jumping), as well as doggy ibuprofen and muscle relaxers every twelve hours.  It took me a few days to build up the courage to crate him, as it broke my heart to take away his freedom.  I rebelled against the "no walks" mandate and purchased a front facing dog carrier backpack, and walked our favorite park - with him tucked inside, head poking out. (P.S. It is quite the workout!)

On Tuesday of this week, we went back to the vet for blood work (to check liver & kidney function after all of the ibuprofen), and to check his gait.  We have been cleared to slowly increase activity, but still rest a lot.  No more muscle relaxers, but continue ibuprofen until his activity is back at normal, and then a slow wean.  I have cried, mourned the impermanence of my best friend, and hope that God grants me at least five more years with him.

Other things that are aging: my couch. I'm buying a new one.  I visited it a couple of times in the store, and had a friend sit on it with me.  On Friday, I ordered it - to be delivered on Saturday!
 Lastly, under the influence of the lovely Sarah, I went to Trader Joe's early this morning. I'd already completed my shopping for the week (minus hamburger buns - tune in later this week for its use!), so this was mostly impulse.
