Winter Appropriate

 
Seasonal citrus.

 Happy Herbivore Meatless Meatloaf Bites, kale and cabbage salad.

 Balsamic roasted brussels and carrots, stuffed mushrooms (cashew cream, sauteed spinach and shallots, breadcrumbs).

  1. Oooh everything looks amazing but OMG that dinner! I need those mushrooms in my life and in my bento box, ha! I definitely need to make that sooner rather than later. How do you make your cashew cream? The grapefruit looks so juicy and delicious too.

    1. Thank you, if it is any consolation the roasted veggies had a little too much balsamic vinegar and weren't quite as tasty. Ha ha!

      Cashew cream: soak cashew in water overnight, drain when ready to make cream. Toss in blender with the seasoning you like (this version: nooch, sea salt, black pepper, herbs de Provence) and as much/little water to the consistency you want. Blend! Keeps about a week in the fridge, Air tight container.

  2. Those mushrooms look AMAZING!! I just had some grapefruit and carrot juice today it was so tasty!!
    I need to look up that recipe for meatless meatloaf bites, they look super tasty.

  3. Citrus seems to be hit or miss for me this year- yours looks fantastic! I love a good meatless ball or loaf, i should give that recipe a try next. I discovered that the 365 brand meatless balls at whole foods are actually excellent (i usually buy them at TJs but they were out on my last trip). Those stuffed mushrooms sound fabulous!

    1. I've had both dry and succulent citrus so far, and this one is a winner. Hopefully the two I bought yesterday are good. I'm trying to remember if I've tried the 365 brand ones, and I think it was only Nathan's...

  4. I have been thinking of buying grapefruits!! I love em so much, especially those juicy red ones.
    The stuffed mushrooms also look fantastic. Really nice job. I can't put that much effort into making anything recently.

  5. Any citrus fruit is better when it's pink or red - grapefruit and oranges alike! I'm super impressed with the stuffed mushrooms. So good.

  6. I was just thinking yesterday that I will probably never experience a good juicy Grapefruit again.

    The Stuffed Mushrooms are seriously gourmet. Hope you enjoyed that meal with candlelight and wine.

    1. I've had stuffed mushrooms three times now, and I'm going to take a break before I turn into a carcinogen. Ha! They were good, though...I'm still mystified that grapefruits can't come to the island. Florida is very close! I'll make some calls. 😉

    2. Grapefruits come, but apparently are frozen before loading to the cargo ship. A defrosted Grapefruit is not delicious...
