Warm Weekend

It was near 80 degrees both days this weekend, so it doesn't seem like November is about to arrive. Thus, my activities and eats are in between seasons. I still find time to sit in the backyard, but then bury myself under blankets on the couch.

Kale and cabbage salad with sesame miso vinaigrette (kinda - I was missing some ingredients. Ha!)
 Cauliflower Leek Soup (it needs something extra, a little boring).
 No promises on a mid-week post. I have parent-teacher conferences this week, but I do have Friday off - which means there should be a bigger weekend blog!

In the Hamster Wheel

I'd love a long weekend or heck, a week off, right about now.  I fully relaxed this weekend, went to three stores for groceries - taking my time to be picky, and get exactly what I want. Long walks, long sits in the backyard. I don't want it to end! But first: look at this tree in the evening sunshine!

Sarah inspired breakfast: TJ's Pumpkin Seeds on oatmeal (with pumpkin butter, too!), and a cup of Morning Thunder tea.
 On the search for fresh almond butter, I picked up a small indulgence. Oh my. The raw ball is like fudge.
 Suja was on sale at Whole Foods, but I only picked up one.  It was really good!
 And the best part of my weekend: this guy. He went to the groomer's, and wanted to show you his cuteness.

Pumpkin bread (it's a little dry - I used applesauce instead of oil, and in the future I'll do half of each.)
Pumpkin Latte with Almond milk:
 Leftover Cuban Black Beans from last week, asparagus and rice pilaf.
My neighbor from a few doors down made a huge pot of vegan & gluten free tortilla soup, and wanted to share.  I added some Garden of Eatin' Guacamole Tortilla Chips and a quinoa-garbanzo salad.

Almost Autumnal

We experienced cold weather briefly, but have been living in the upper 70s the last week. Those temperature swings have started turning the leaves....
 Which means, I want toast (avocado on peasant loaf slices)
 And homemade pumpkin bread:
Which means I have to nearly die in my workout classes, so I can still eat it:
 But then, it doesn't matter anyway when I go to happy hour and order the seasonal punch (apple whiskey, cinnamon liquer, and I don't remember the rest.)

Meal Prep Mania

I'm leaving behind lunchtime sandwiches for the foreseeable future, and that means: Sunday night meal prep!

 Group 1: asparagus, tomato, and shallot sauteed over rice pilaf.

Group 2: Cuban Black Beans with broccoli and couscous.

I have more than I need for lunches this week, so it might show up with a twist in my evening meals.  It's a crazy week, but I intend to post on Wednesday or Thursday! I hope you've had a great weekend!
