Double Time

I'm including my weekend pictures with today's, as I fell into the AP English abyss of essay editing on Sunday - as this was their first major essay of the year, I promised to shred their writing and therefore had to deliver heavy marks on grammar, syntax, diction, et al.

As Summer Exits...

I'm not sad to see summer go.  It broke up with me six weeks ago, so as far as I'm concerned - see ya! ;)  The problem with Colorado is that we only have two seasons: summer and winter.  Spring is usually one week, and autumn... for about four days.  Our first snow is usually in October, but on the rare event - we've had a quick storm in September.  I really hope we can actually have a fall season this year! Nonetheless, I made sure to squeeze out a little more summer this weekend.

Farmer's Market visit (only two weeks left for this one! Other markets will go into October.)
 End of the season peaches, green beans, tomato, and zucchini. Huge bunch of kale, and organic cilantro.
Mixing the cold brew with hot water and coconut creamer is just as delicious.
Adventures in pizza: this was my second one, with sauce, spinach, and not enough Daiya mozzarella (I found that after baking- more cheese! I have one crust left, so I'll try again. In the future, I'll make my own crust. This is like a thick cracker.)
I think this will also be my last week of sandwiches and tacos, so you can look forward to seeing them one last time. Ha ha! I hope you've had a great weekend, see you soon!

Good Stuff

I'm happy to report that all of the new items I have purchased recently are delicious. Here's a report from the last few days. Firstly, well overdue review of Just Ranch: superb.
 Tacos. Always good.

Iced coffee. (Califia still wins by a mile, but Chamelon + So Delicious Coconut Creamer + Water is good.)

Upton Bacon Seitan: really good in my sandwich of lettuce, spicy sprouts, tomato, and Just Mayo. (I cooked up the whole box, then stored it in the fridge to grab slices for my daily sandwich prep.)

Weekend Things

Catching up with a few friends, laundry, errands, workout, Remy time... Just standard weekend life!

Almond milk latte on a patio while it is still warm (nothing but 70 degrees this next week, which I am so grateful for after four weeks in a hot school!).

 I decided to stock up on traditional American dinners of homemade pizza (accidentally vegan pizza pre-made crusts!), and crunchy tacos. I'll show you how they turn out!

Grocery splurges of the week:
 These seitan bacon strips will join spicy sprouts, tomato, lettuce, and Just Mayo on wheat in my lunchbox.
In case you haven't noticed, my rule of thumb for beverages is to only purchase when on sale.  Thus, this cold brew was $3 off, and the creamer a $1 off - let's try it!
Here we go - let's face this week, and conquer it!

The Long Weekend

I've said it before, and I'll say it again - every weekend should be three days long! I'm so happy to have tomorrow off, even though I will still be laboring - I have lots to grade! On to the photos:

This isn't the final placement, but the folding wicker table (40 inches) I've been wanting for months was finally back in stock, and it arrived four days after I placed the order!
The other two chairs will eventually make it around the table. Inaugural meal of pan roasted veggies and pine nuts over linguine:

Speaking of supermarket, here are this week's indulgences: La Croix 2/$5 and Sweet & Salty Nut Mix $2.99 ($5.99 full price!)
Speaking of indulgences, last week's splurge included the Califia Farms Almond Milk & Espresso bottle. It was amazing. I had the last of it this morning! The Barbara's Oat Squares are identical in taste and texture to Quaker Oats Squares. Win!

Lastly, I've been trying to spend some time outside while the nice weather lasts! Here's a shot from City Park, and a statue whose purpose evades me.
(It just said it was a gift in 1915 to the city...)
