Food Redemption

There was avocado toast, from a very good avocado.
There was more avocado in the amazing Veggie sandwich from Snarf's...
I researched how to make my own Cashew Kale Salad, after last week's debacle. and this one from Anne the Adventurer is close, but dressing wasn't quite right. Still good enough to eat. And there was more like two cups of salad, as opposed to five bites. 

See you this weekend with highlights from this fourth week (already?!) of summer break. I never want to go back to work. Why can't we all be independently wealthy and not have jobs?!

Some Satisfaction

Today was a great "typical summer break" day in terms of activity, but it was a fail of the food front.  Remy and I began our day with a long walk in the early morning, while it was still cool.
After four days of waiting, I opened an avocado to find it black inside. Same result for the second, so I had un-avocado toast.
75 minute yoga class was perfect; I'm so sore from Monday's spin class and yesterday's kettle bell class - it was just what I needed. Late morning snack, which was good, of blueberries and cocoa almonds.
I did some batch cooking of various taco fillings on Monday (you'll see it on the highlight reel), and so I had the yellow squash, red onion, zucchini, and soy crumbles in taco seasoning for lunch. Here's how they were assembled:

This afternoon I shopped for and planted flowers with my Mom, and then we went in for a pedicure. Yay!
Then, I was majorly craving the cashew kale salad from Hillstone. So I called, waited 30 minutes, spent $12 (with tip), and then... It was less than a cup of salad.
I finished it in five bites. I'm so cranky about it, I won't make anything else for dinner.

Week 2 of Summer

Highlights from week two start with a lunch from ModMarket (the Superfood Salad, minus the cheese and added tofu).
Additions to the back garden: honeysuckle, and a gnome (for the gnome door).

Lounging around with the boys (it was hot outside, so we walked in the early morning and they snoozed off and on throughout the day!)...
I treated myself to Native Foods, and selected the Chicken Bacon Avo Club Sandwich. It was huge.
Lastly, as tomorrow is Father's Day, I thought I would share the card I'll be giving my Dad.

This morning started with a 75 minute yoga class, and was followed by smoothie (Whole Foods Plant Based Protein Shake in Vanilla Caramel, frozen banana, spoonful of almond butter, and unsweetened almond milk).
Remy, who was his usual self by Monday, demanded a long walk shortly thereafter.
Snack time, upon return...
Followed by the official drop off of a three day houseguest (his mommy is out of town until some time on Friday)...
(One of my projects is to DIY a small patio, so he is sunbathing on the tarp.)

Lunch: couscous, asparagus, tempeh.
General dog cuddling and hanging out for the rest of the day.

Dinner was an attempted cold pasta salad with kale, broccoli, and chopped tomatoes. I need to work on the spice mixture, but perhaps as the leftovers marinade overnight, it'll improve.
This week is markedly improved to last week, I should have plenty to show on Sunday! Yay! I hope you're having a great week!

Week 1 of Summer

There isn't much of a highlight reel from week one, as we were a household in recovery - but I do have a few things for you:
A nice long walk on Tuesday, yielded plenty of greenery and flowers.
Various images of snacks and meals...
Hummus and cucumbers on unsalted matzoh, I've been eating this for a couple of months and it finally made it onto the blog!

Red Rocks Tea with Almond milk, ironically my friend ordered the exact same drink (I was outside with Remy).
Strangely, I've had cravings for cooler weather breakfasts but I'm sure that'll change as I dive into my summer workout class schedule (which is before breakfast!). Oatmeal and pancakes.

I'll be back on Wednesday with daily eats, and hopefully a more exciting highlight post for week 2!

Random Wednesday

Breakfast was nibbled on by the handful.

Baked potato with an experiment: Better Than Sour Cream mixed with a little Sriracha, topped with green and onion. It was good!

Asparagus, broccoli, spinach, mushrooms, and shallots sautéed and served over couscous. I added too much black pepper.

I was distracted most of the day by own illness (I suspect I ran myself into the ground those last couple of weeks, and now I get to pay for it!), and because Remy was at the vet having a handful of loose molars extracted.  I was upset to have to have it done, but I didn't want him to have an infection or abscess later on.  He's super out of it now, but he did eat a little dinner out of my palm. Poor baby!

Here Comes Summer!

The end of the school year really handed it to me, and I am paying the price now, but will soon be healthy and enjoying summer break! Here are a few I,ages from the last few days:
