These last six days have been so busy, I hardly took any photos - but I do have these random four.
1. When I don't make my bed, I can find Remy back in it when I come home from work.

2. The weather has been great, and when we were able to sneak in a walk, I noticed these classic cars having a meet up.

3. The set up for the family reunion in my cousin and her husband's backyard. Their Labradoodle guarding the tent.

4. Enjoying the peony season and a glass of wine when I came home last night. I had a hard time staying awake past 8pm.

Also, there are four days between me and summer break. HOORAY! I could cry, I'm so happy.

See you this weekend!

Visions of Semester-End

In the quiet moments, there were walks in the sunshine.
In the crazy moments, I thought about (and later imbibed) this:
In recovery, I haphazardly bought groceries from Trader Joes:
(The cute notecards are from Target, I purchased them to write "love notes" to the students of my advisory -a group of 13 that I've had every morning for 30 minutes the last four years. Now that they are graduating, it is bittersweet and each advisory teacher will give these notes out at the banquet on Wednesday, wishing them well. Did I mention that I am the emcee and organizer of said banquet? I feel like I'm planning a wedding!)

I hope to see you this week, but it might be on Sunday. Or next Monday. Banquet, Graduation, Grandma's 90th birthday party, family reunion....all before then. *deep breaths*

Wednesday Meals

My allergies (sinus headache) are kicking my butt, so I didn't finish lunch or dinner (Toyko Joe's bowl, met my parents and brother for dinner - bro has been working out of state for the last month, so it was good to see him!). This "calm week" hasn't been slow, and I'm happy we're half way through it!  See you this weekend!

A Little More

Here was the other meal produced by last Sunday's kitchen effort:
TJ's Chickenless Chicken and Cremini mushroom ragú, couscous, collards and raisins.

The gnome door has re-emerged from the winter. I'm thinking of adding to the tree. Any suggestions? Should I buy a gnome figurine?

Farmer's Markets are back in full swing. It was yet another overcast rainy weekend, as evidenced by the clothing and the gloom:

I was able to catch up with some friends this weekend, and one stop included this amazing Cashew Kale Salad with Sesame Miso Dressing and olive oil baked potato. These are my leftovers:

I made so much food last Sunday, I repeated the lunch prep.  All I needed to add was another bunch of collard greens (sautéed in It's Not Chicken Broth and raisins), and more couscous. This will be the end of the asparagus, balsamic roasted veggies, and ragú.
Another delicious week ahead! Also, this is my last calm before the storm. The week of May 23-Memorial Day is pure chaos. I will probably be delirious.  But, in the meantime, I will see you on Wednesday!

In the Kitchen

This should have been written on Sunday, but time escaped me.  I have more than a week's worth of lunches and dinners here, so I really out cooked myself! Ha!

Collards, onion, shallots (not used), yellow squash, zucchini, mushrooms, cherry tomatoes, pasta (not used), couscous, asparagus. I didn't have much of a plan, but decent results emerged!

Steamed asparagus, plain couscous, TJ's Chickenless Chicken, onion, and mushroom ragú.
Balsamic roasted veggies, collards with raisins
Assembled lunch sample on the left.

See you this weekend!

Surviving the Crazy

Apologies for the brief hiatus, I'm drowning in end of year tasks. Here are a few images from recent days:
Homemade ramen soup.

Tried out these chicken-less strips.  I added them to the Asian Chopped Salad taken to work for lunch. It was okay. I'll try to use up the rest!

We've had a mix of cool, rainy days and sunny, hot days.  I think the gardens must love it!

Warm weather means smoothies, and since I refuse to buy Vega at full price, I tried a sample size of Whole Food's version. Delicious! It is listed as vegetarian because it is produced in a factory that shares equipment with milk, but if it's a negligible chance - I'm willing to take it. So, I bought the small tub (on sale, about $12.50 - a great price!) Also, I've been loving and nearly finished a bottle of the Everyone Soap in Lemon and Coconut, thus I thought to try a new smell. It's good stuff.

Our prom was last night.

(Dance floor, as seen from the second floor).

I have a bit of a respite this week and the next; shall we call it "moderately busy", instead of "ridiculous nonsense sleep deprived chaos"? Yes. I'm relieved.  I hope to post again tomorrow...
