Mid-Week Meals

Toasted whole wheat sourdough with mashed avocado and nooch:
TJ's Stir fry veggies, organic ramen noodles, peanut sauce:
Baked potato with Better Than Sour Cream, spinach salad with walnuts, dried cranberries, and raspberry dressing.
In the mood for dessert: blueberries, strawberries, shredded coconut.

We're over half way to the weekend! Woo hoo! I hope you're week is going well!

Hello, Spring!

It took all week, but the warm weather is here! With only an occasional rainy day on the horizon, I feel confident that we can say "farewell" to winter! My meals are still in transition, but here's a sampling of the past week:
Quaker Oat Squares and almond milk.
Red and white quinoa with jasmine rice blend (cooked in veggie broth), steamed veggies.
Gluten Free Vegan Turtle Brownie from The Beet Box (I'm not GF, but that's the only way this piece of decadence is made!). 
Asparagus and wild rice.
Native Foods BBQ Chik'n Salad.

Full Regression

It has been over 48 hours of winter, despite the month of April on the calendar:

My meals have been accordingly winter-like:

Happily, it is 8 inches of slush, and so driving isn't too bad.  Sadly, some of my weekend plans were cancelled. 

It's going to snow again Tuesday, so I'm planning more of the same and keeping my shovel handy.  If you live downstream in another state, you're welcome. No drought in sight! Ha!

Caught In Between

As the weather seems to vascillate from winter to spring, my meals are following suit...

Springtime smoothie for breakfast (Vega One, frozen strawberries, frozen banana, cocoa powder, water - banana split, if you will!), and apple taken for mid-morning snack.

Mid-season lunch: baked sweet potato, Better Than Sour Cream, spring onions.

Unseen afternoon snack of popcorn (all seasons!)

Wintery Miso Soup (organic ramen, carrots, broccoli, more green onion, kombu miso broth, sriracha)
My miso paste is supremely old, so it wasn't flavorful. But it was filling and warm!

Winter is supposed to arrive again this weekend, and I have a happy hour to attend on Friday where I want a margarita and a patio. I'm trying to will it into happening! I'll report back on Sunday. 😉

Real Quick

I didn't slow down enough to capture more than a couple of items this weekend, but here's what I do have for you:
Frozen banana, frozen pineapple, Vega One, water.

90 minutes of medium pressure to knead out the hunched shoulders (work and HIIT class), sore calves (spin class) and arches (I need to buy better shoes for being on my feet all day!). 

Another serving of last week's chili.  The cornbread dried out, so this was a less exciting meal.

I had to purchase a new lunch box, as the zipper split - it's pretty cute! Stir fry veggies, sprouted tofu, jasmine rice, and Soyaki for lunch.

I was planning on tacos for dinner, but figured I should not do them for a fourth post. Ha ha! So, a trip to TJ's...
Super Spinach Salad! I picked up the Fruit Floes as well, but haven't tried them yet.  I'm sure they're great!

End of Spring Break

The sun didn't shine until yesterday, so the rest of the week looked like this:

Nine more weeks until summer break! April should be "normal", but May will be crazy busy.  Here we go!
