Weekend Review

Let's start with a few meals from the weekend!
Homemade waffle with pb and maple syrup.

Chopped spinach salad with avocado, walnuts, dried cranberries and raspberry vinaigrette.

Veggie pasta with tomato basil sauce.

A bit of cuteness:
I treated myself to new pill boxes (I take medication for my kidneys). The week's amount is in individual tabs inside the larger case on the right, purchased at a local shop.  The smaller (when I need to take them with me) case has three compartments inside, and was found on Etsy.

Intermission

It has been crazy lately, and seems to be continuing in that fashion for the next three weeks or so! Yesterday, I slowed down and enioyed the 63 degree sunshine with a friend, sipping an iced tea on a patio.
Toasted veggie sandwich a little later...

A little meal prep for three days of lunch: saag and wild rice with lentils and blackeyed peas.

I hope to pop in this week, but between meetings, parent/teacher conferences, Grandma coming to visit, and Remy's teeth cleaning (anesthesia-free! They use Bach Flower essence for anxiety, wrap him in a blanket to keep him still, and then scrub away)... It is going to be busy!

Feeling Special

Not only is this President's Day Weekend and Valentine's Day... I successfully made another trip around the sun. I celebrated by not cooking, and spending time with friends and family. 
My free meal, a Deli Reuben, from Native Foods on Friday night.

Midday Saturday meal from Whole Foods: tofu spring roll, avocado sushi.

Today's Menu

Doldrums of winter, and I am itching for spring! We're supposed to hit 60 degrees tomorrow, and I can't wait! My meals this week have been standard chilly winter fare, and here's what happened today:
A Shenandoah Vegan throwback: oatmeal with raisins.

Silken Tofu Eggless Salad Salad with Spinach on sprouted wheat and a juicy Cara Cara orange (far superior to Navel, if you ask me) taken for lunch.

Uninspired dinner of broccoli and spaghetti with soy crumbles and tomato basil sauce.

Taco Week

Putting that salsa to good use, here are three ways I've been eating tacos everyday this week!  Ranked from most favorite to least: avocado, kale, salsa as the winner...


Second best: soy crumbles in taco seasoning, kale, and salsa.... (In the background, a comal which is essentially a cast iron flat top, which I use for heating tortillas. I purchased it a decade or more ago from a Mexican supermarket)


Least favorite, but I'm trying to re-work the sauce: molé sauce with portobello mushrooms, kale, and salsa.

I expected the sauce to be more flavorful than it is. So, I will report back this weekend - worse case scenario is I make enchiladas with the sauce!
