Meal Prep Mania

I'm leaving behind lunchtime sandwiches for the foreseeable future, and that means: Sunday night meal prep!


 Group 1: asparagus, tomato, and shallot sauteed over rice pilaf.


Group 2: Cuban Black Beans with broccoli and couscous.



I have more than I need for lunches this week, so it might show up with a twist in my evening meals.  It's a crazy week, but I intend to post on Wednesday or Thursday! I hope you've had a great weekend!

  1. Weekend meal prep is key for me with a busy week ahead. I LOVE rice pilaf...! We had rice a roni a lot when i was a kid and i still have a soft spot for it. I like to mix in some sliced almonds for crunch and whatever fresh herbs or some green onion. Looks like a great lunch combo with the veggies!

  2. Oooh nice job on the meal prep! I always have the best intentions for prep but get so damn lazy. Yours looks amazing and definitely is good inspiration for when I stop being so damn lazy, ha. The beans with veggies and couscous looks so good! I always forget about couscous which is a shame because it's so good! Have you ever had Israeli couscous (the larger pearl)? It's sooooo good!

  3. You could make extra $ selling lunches to your co-workers. Those look extremely satisfying.

    I have never had Rice-A-Roni or Near East. I have been missing out apparently.

    1. I have one colleague that brings in a Starbucks premade panini or box for lunch everyday. I wonder if they know how much they spend?!

    2. I picked up a box of the Near East Pilaf Mix this weekend and then put it back. Do not look at the sodium stats if you get my drift.
