Week 3 of Summer

Batch cooking of taco fillings, from baby portobello fajitas to squash, red onion, and zucchini:

I added tofu or soy crumbles to the tacos as well. 

Summer is for ice cream:

And visits to flower shops:

And sitting in the grass:

  1. Ooooh!!! Week three looking good!! The colors in the taco filling are so pretty, everything looks so fresh and delicious. Definitely some great looking stuff, and would work well in pasta too if you needed something a little different!

    I agree that summer is for ice cream. I've been obsessed with ice pops lately, they are my absolute favorite treat right now. The flowers are beautiful and Remy is so handsome!!! I just want to snuggle his face, he's too much!

    1. Thanks, Sarah! I have a little more than one serving left, and I can't say I'm sad to be finished! Ha ha! A little too much of a good thing, so I'll next to use it in a pasta, as you suggested! I meant to make a taco salad, but didn't.

      He's enjoying summer break, I think! 😉

    1. The lawn was at a park, so I'll pass your compliment onto Parks & Rec 😉 Yes, I did buy flowers! You saw them in the previous post. The one with the wimpy salad!
