Food Redemption

There was avocado toast, from a very good avocado.
There was more avocado in the amazing Veggie sandwich from Snarf's...
I researched how to make my own Cashew Kale Salad, after last week's debacle. and this one from Anne the Adventurer is close, but dressing wasn't quite right. Still good enough to eat. And there was more like two cups of salad, as opposed to five bites. 

See you this weekend with highlights from this fourth week (already?!) of summer break. I never want to go back to work. Why can't we all be independently wealthy and not have jobs?!

  1. Hooray for redemption and hooray for avocado everything! That avocado does look perfect. I see avocado toast in my future. The veggie sandwich looks so incredible. Nice and hearty and packed with veggies. I hate veggie sandwiches that are mostly bread. I'm glad you found a kale salad recipe that you enjoy and that is satisfying to you, even if it is not the same.

    I can't believe the summer is going so quickly as well! I hope you've been thoroughly enjoying it. I hear ya on the independently wealthy sentiment, ha!

    1. All the avocado, all of the time! Ha ha! I was so happy to finally have a great avocado.

      It's all about the dressing! This one was tangy, I attribute that to the AVC. I'm going to try a sesame miso dressing recipe and see if that was it.

      I still have six weeks to go, so maybe I'll feel ready at that point. Or not. 😉

  4. What delicious meals lately ! The sandwich and toast look amazing....
    Vegan ceasar dressing is hard- i like the version from OSG best (you really do need the veg worstechier or whatever sauce) but i still tweak it some adding a splash of the caper brine and then maybe most importantly i crumble fine a few pcs of those seaweed snacks that i add in to the greens.
    I'm so excited for the long weekend....

    1. OSG has some great ones, I really should try her vegan Caesar! Happy Healthy Life has a creamy poppyseed that's great too. I've Googled a few sesame miso vinaigrette recipes that I'll try next!

  5. Snarf's is such a great name for a restaurant. Glad they didnt let you down with the Sandwich. True Food Kitchen had a great Kale Salad, but I dont know how economical you would consider it.

  6. If you work out how to do that independently weathy thing, let me know. I could do with more holidays and less work too! And if you can't work out a better holiday-to-work ratio, at least you've improved the salad ratio!
