Mid-Week Meals

Toasted whole wheat sourdough with mashed avocado and nooch:
TJ's Stir fry veggies, organic ramen noodles, peanut sauce:
Baked potato with Better Than Sour Cream, spinach salad with walnuts, dried cranberries, and raspberry dressing.
In the mood for dessert: blueberries, strawberries, shredded coconut.

We're over half way to the weekend! Woo hoo! I hope you're week is going well!

  1. I don't think I've ever seen whole wheat sourdough before. That's a beautiful slice of avocado toast!!

    1. I hadn't seen it either! It's interesting, but I think I prefer straight sourdough.

  2. Oooh these meals look amazing! An absolutely perfect food day. I've been craving summer fruit like crazy, I need to get some berries in my life. It's been a little while since I've had avocado toast too, I need to get on that too!

    Just a few days left until the weekend! When is your last day of school? I know you finish earlier than they do here in NY.

    1. I'm finished June 3rd! Now that it is May, the month is going to fly. So, so much to do! I'm sure the last day will sneak up on me!

      These berries are early season, but enjoyable nonetheless. I can't way for sweeter ones, and cherries! Yay!

  4. I've been skipping the bread lately but eating plenty of avocado. What a perfect meal.
    I'm a big fan of peanut sauce... I made some for a cabbage salad recently.
    Beautiful baked potato, too. Have never actually tried that sour cream myself.

  5. You made it to the weekend! I still can't get enough of avo on toast, though it's always hot sauce as a topping rather than nooch round this way. I'm jealous of anywhere with access to good vegan sour cream though - it's like hen's teeth round here alas.
