Second best: soy crumbles in taco seasoning, kale, and salsa.... (In the background, a comal which is essentially a cast iron flat top, which I use for heating tortillas. I purchased it a decade or more ago from a Mexican supermarket)
Least favorite, but I'm trying to re-work the sauce: molé sauce with portobello mushrooms, kale, and salsa.
I expected the sauce to be more flavorful than it is. So, I will report back this weekend - worse case scenario is I make enchiladas with the sauce!
