Recovery Weekend

I realized that I haven't shown you any pictures of my backyard after the flood two months ago.  It's fair to say that the marigolds rebounded triple fold.
 Even with the week kicking my butt, I ended up needing to write lessons on Saturday.  I worked for four hours! Gross. (New computer from the school district - yay! Bless Me, Ultima was the summer reading for American Lit.  AP Lit & Comp read The Odyssey.)
 Frankie from next door came to visit.  Remy appreciated the company while I worked.
 Spelt is my favorite kind of bread, and here it is toasted with avocado, tomato, and Old Bay seasoning.
 I finished off one of the three dishes I made last week, but have exactly enough of the curried veggies as well as quinoa and kale to get me through this week's lunches.
 My first homemade loaded sweet potato.  Oven baked both the sweet potato and the marinated tempeh (just long enough to heat it), Tofutti Better Than Sour Cream, and green onion.  I'm not sure I love it, because the sweet potato is....sweet.  But, I needed to use it and I'm glad I tried something new.
I took naps both yesterday and today, caught up on household chores, and only left the house once today.  I wish I could have had more energy, but the week really took it out of me.  I'm adding workouts back into this week, and I hope to have enough time in the mornings for breakfast.  See you soon...

Back to School

No rhythm as of yet, so I missed out on breakfast again this morning (third day in a row). Lunch was the curried veggies, afternoon snack of chai and dolmas, back to school night for two hours followed by the last of the zucchini, tomato, and pine nut linguine. I can hardly keep my eyes open, so I'll see you this weekend....

Searching for a Rhythm

I think I've described it like this previously: summer break transition goes from being the boss, to unemployed.  Going back to school is like being unemployed to being the boss.  I'm still trying to figure out my sleep, workout, and eating schedule - hoping that I can get a rhythm nailed down by the end of next week.  This morning, I chose to snooze and didn't have time for breakfast.  Late morning, I started to work on lunch:
 Quinoa with zucchini, tomato, sweet corn and shallots over kale.  Delicious.

Once I came home for work, I was really craving a smoothie.

All of the meals were delicious.  Full time classes resume tomorrow.  Wish me luck!

Mega Meal Prep

I've taken a new approach: to prepare the laborious part of both lunch and dinner meal options ahead of time, so they only need reheating/adding of something along with a fresh salad.

Exhibit A: zucchini, tomato, and toasted pine nut linguine.
 Pine nuts dry toasted in a skillet, cherry tomatoes halved and tossed with zucchini, sauteed in olive oil and Herb de Provence. When I'm ready for the meal, I'll cook a portion of linguine and add them together.
 Exhibit B: The other zucchini and remaining cherry tomatoes, corn off of the cob, shallot, and quinoa.

All done.  Will serve over steamed kale.

Exhibit C: (No real idea on this one. Just needed to use up produce that has been in the drawer for three weeks.) Cauliflower, peas, red onion, and white sweet potato.  I made a mild curry sauce, although not enough as I didn't have enough coconut milk.  Will probably attempt a saag as a side, or a salad. If you have any ideas - let me know!
 
I'd say my first Sunday meal prep was successful.  I feel like I've been in the kitchen for hours!! See you on Tuesday with the actual meal results.

Work Retreat

Webster defines "retreat" (when used as a noun), as a place of quiet mediation and relaxation.  This was our third year participating in a mountain "retreat" with colleagues. Yesterday and today we had meetings and team building activities aplenty.  I'm so tired. I'm retreating to my bedroom in just a moment.  Ha ha! 


We have more vegetarians and one more vegan (total of four!) on staff, and the food has never been more displeasing. Ha!  Lots of white bread, beans, and salad.  My principal did make "healthy" sopapillas (no lard or crisco). I ate four. Sooooo good.  Cinnamon and sugar after they cooled to "warm".

My thanks to you for the encouragement on my previous post! I'm still not certain about the longevity of this hobby, but I suppose the answer will reveal itself in time! xoxo

Unprepared Tuesday

On Sunday evening, I couldn't be bothered to meal prep.  It's a chaotic week, so that probably wasn't the best decision.  Nonetheless, I had some delicious meals.  I stopped by Whole Foods on my way to work:

Steel cut oats with berry compote, maple syrup, and pecans. Yes.

I will prep my meals for next week, as the return of students equals even an even busier life.  Will I share it here? Who knows! My last post had low views, and zero comments.  Is it a hint to stop posting? Hmmm.... Time will tell!

Transition Weekend

Friday's return to work was like a good shove into the Kiddie Pool.  Tomorrow, I'll cautiously wade in a large lake.  Probably a lake with murky water, unknown depths, mostly friendly boats but one or two sketchy urchins stalking from a distance.

Arming myself with a few good hours of friends, a glass of Prosecco, and one tough workout class - onward I go!  Speaking of friends, there is a new one on the block.  She's a couple of doors down, but has an old dog named Boss who "tolerates" Remy's requests to play but does not engage.  Remy keeps trying to convince him.
 Back to the Farmer's Market for a repeat purchase of last week's items: beefsteak tomatoes, zucchini, corn, and peaches.
 In preparation for actually meal planning the week, I picked up a new cereal (which I've sampled in the form of a handful - very good!).
This guy is not excited about my return to work...

The Last Free Tuesday

My next Tuesday off? November 24th.  Gross.  Happily, time seems to be moving at a slow pace! Here's today: post 45 minute circuit cardio/strength training class, a Vega Vanilla Protein & Greens plus frozen blueberries and water smoothie.

Summer Highlights Week #8

Since returning 10 days ago from Texas, I have done a lot of the same: workout classes, spending time with friends, and general relaxation. I also ate the same thing over and over, with only a few variations.  Lastly, I spent a lot of time outside, especially enjoying the 78 degree evenings we have had as of late!

And with that, summer is basically over.  Next week I have to go into work for a couple of meetings, then it's full time on the following Monday. It does feel like it has been a long time since the first week of June, but that doesn't mean I'm ready to go back. Ha ha!  See you on Tuesday...
