At the end of the week, it came to my attention that I had very little in the fridge (we're talking condiments and one bag of greens). Very little in the freezer (frozen fruit, one bag of frozen corn, and Meatless Meatballs). And only grains in the cupboard.  I thought about it, and realized I hadn't done a full shopping trip in nearly a month.  Apparently small, $15, grocery runs had been sustaining me through the recent busy season.  Needless to say, I took care of that!
 Kidney beans, ketchup, salsa, raw cashews, veggie dogs, shredded carrots, spelt bread, strawberries, cantaloupe, bell pepper.

Lastly, my heart is replenished because I have been able to spend ample time with this guy:

Last full week of work - only two days the following week! It should be very mellow this time, as opposed to the crazy of last week.

Memorial Day Weekend

I spent the holiday weekend in Kansas; it was our first time back since December.  Two cousins had recently given birth, so I met their little ones, and spent time with Grandma.  She's still cranky (a.k.a. the "angry" stage of grief), and we're not sure what will shake her out of it.  Nonetheless, I'm glad we were able to spend some time with the family.  As there were 12 of us shoved in around the table, I felt uncomfortable photographing my food, but I mostly ate what I brought with me - TJ's salads - as well as beans and bread. Here are a few scenic shots from the farm and the ride back home.

All Different

Meals that are new or have been long absent from this blog had made their appearance! A busy, and long day.

A vegan colleague advised me yesterday of her homemade cherry chip scones.  She brought me one for breakfast this morning. So good!

Spring Weekend

90 minutes of hot yoga, quick perusal of the Farmer's Market (so many people!), hours of weed pulling, grass seeding, and flower bed preparation. All of that before 1pm on Saturday. It must be spring!

Stir-fry veggies actually not stir-fried. Oven roasted and tossed with two ramen bricks (once cooked).  Tofu marinated in TJ's Soyaki and baked in the oven on top - you'll see it on Tuesday!  I feel like summer will be here before I know it - quickest spring ever!

Three weeks from today, I am on summer break!!! Yes, I'll have to go back the next day to turn in my keys and check out. Yes, Monday and Tuesday of the following week I have to go to all day meetings with the entire English department.  But still - the freedom from everything else! Woo hoo!  Aside from this realization, today was a typical Thursday.  Started with a toasted Everything Bagel with Tofutti:

On My Way

It has been two weeks of irregular everything, so it feels a little strange to be working myself into old patterns.  Nonetheless, it was a "normal" Tuesday:
Half of a frozen banana, frozen blueberries, Vega Vanilla Protein & Greens, unsweetened almond milk.

Last night, I prepped lunch for the rest of the week.  I picked this up over the weekend, and thought I'd give it a try.

 It's a foil container with baby potatoes and an herb packet.  Mix with two tablespoons of oil, into the oven - all done! I cooked fresh green beans in the oven as well... Served with marinated tempeh.
 45 minute spin class, followed by dinner:
Mixed greens, dried cranberries, walnuts, raspberry dressing.  TJ's Chickenless Tenders and BBQ sauce.

Back Above Water

Hello! The week was ridiculous, as expected, and I didn't really sleep the nights we were in the mountains.  However, the students had a great time and I took a lot of pictures of them - which I can't share, obviously - but I did get a handful of nature shots.  I drove up with two other teachers (we needed to have a few vehicles available in the event a student needed to return to Denver due to illness/anxiety), and once we made it over the pass we stopped for a few pictures.

It was snowing on top of the pass, but only raining off and on in Granby.  The students participated in lessons focused on post-secondary options and senior year timelines.  In between the workshops, they signed up for a variety of activities including archery, horseback riding, mini golf, rock climbing wall, rec center, and yoga.  All of this was planned and executed by the teachers - we were all so tired!  The view from our lodge (students were in quad rooms - I named each room a mountain animal, with a sign on the door, and a den mother/father.  Ex: Mountain Lion, Moose, Hummingbird...)  Adults slept in triplets.

Our meals were in a dining hall - buffet style, and I had the same breakfast twice: bagel and fruit.  My other three meals (two dinners and a lunch) were pb & j sandwich and salad, roasted potatoes and salad, and veggie burger and salad:

The morning we left (Friday), the fog was heavy and it had been raining and snowing overnight.

The mountain pass had about a quarter mile visibility and was snowing, so I took those switchbacks nice and slow!  Friday afternoon and all day yesterday, I slept and put my life back together.  Clean house, laundry, groceries, and a friend invited me out to a mani/pedi.  I feel like I have my life back!!  I'm going to spend the day with my family celebrating Mother's Day, but it's not exactly patio weather, so we'll be inside:
It rained all day yesterday, and last night it turned into snow! 10 inches of moisture total.  It snowed on Mother's Day last year, so perhaps this is the new normal?! Ha!  

There are four (easy) weeks of school left, and I am so happy to have time for myself again!  I hope you've been wonderful, and are enjoying your weekend!

Waist Deep

There isn't much to this post, other than trying to stay afloat.  In between the SAT prep in the wee hours of Saturday morning, and Prom last night - I took naps. Yes, plural.  Laundry? Nope. Cooked? Definitely not.  I dislike living a life where all I do is work, and then recover from work. Only to work again.  But that's where I am, and will be, until Friday. Thus, a few images:
