Thigh High

I'd say the crazy is about mid-thigh, trudging through these two insane weeks with moderate difficulty.  I do have my eye on the island (noon, next Friday), though, and keep reminding myself that it'll all be over soon.

Avocado Toast
 Homemade Chinese: bell peppers, onions, carrots, and tofu in sweet & sour sauce (made with garlic and pineapple), over brown rice.
 I've been thinking about the Super Spinach Salad since yesterday, and ran into TJ's to pick one up after spin class.

Even though I said I wouldn't buy anything else, I decided to go with whatever else I could carry in my hands, as I didn't bring a bag.  Thus, impulse peanut butter filled pretzels, and lunch for tomorrow:

Summer Dreams

Full tilt in the crazy, about knee deep today.  Waist deep by Saturday.  Drowning by the end of next week.  Whilst proctoring for three and a half hours today, I made a mental list of my summer plans and thought to share them with you here:

1.  A visit to Virginia
(Grandma's backyard, I painted that bird house for her about 12 years ago!)

2. House and yard projects
(My flowers and helper from last summer.)

3. Lots of new/different workout and yoga classes.

4.  Books I've been meaning to read.

5.  Hikes and long walks with Remy.

6.  Farmer's Markets, patio lounging with friends.


7. A week in Texas.  Starting with a conference in Austin, then four days with family that lives there.

On the Horizon

I've tried to relax this weekend, even cancelling two of the four commitments for my sanity's sake.  This week: ACT, college campus visit, SAT, and prom.  I could cry.  All of this means no free time (SAT and prom both on Saturday), and since all activities outside of a college campus are my first time proctoring/chaperoning... I'm extra anxious.  Luckily for my students, I hold it all in.  Sadly for me, I won't be sleeping.

Back to the weekend, I needed to borrow my Mother's sewing machine to hem a pair of pants.  Thus, an attempted snuggle with Terra.  Her blindness has stabilized, and appears to not be worsening.

 I asked her for help in getting started, but she wanted to do it.  I kept her company (it took 5 minutes!).

I still plan on cooking a few things for the week, but then again... I might sit here on the couch with Remy.  It's raining outside, perfect "do nothing" weather!  See you on Tuesday.

Good Choices

 I decided to limit myself to one delicious carbohydrate today - in the form of a toasted Everything Bagel with Tofutti. Good choice.

Asian Chopped Salad with Mandarin Oranges. Also a good choice.

Apple with pb prior to spin class (I need to pat myself on the back - I worked pretty hard tonight!)

TJ's Orange Chickenless Morsels over steamed kale.  Those morsels are always a good choice.

This weekend is "moderately" busy, but consider it declared: I will take pictures and show them to you! Even if they are boring! ;)

Into the Crazy

I believe we've entered the craziest time of the school year.  ACT, SAT, AP exams, prom,  mountain retreat, fall schedule creation, the list goes on... Add to that weekends filling up quicker than I care to realize, and I wonder how I'll manage! I missed this past weekend due to five different events/activities (none school related this time), and ended up with only two pictures.  But, here I am! I'm trying not repeat meals too much, so as to not bore you with monotony but my creative juices are low at the moment.

Rewind

Starting with arguably the best meal of day: dinner.
Which was enjoyed post-spin class, with ravenous pleasure (read: I was really, really hungry.)

Why such pleasure? I didn't have time for a snack after work, as my neighbor and Frankie invited Remy and I on a long walk right when I got home.  

Why did I need a snack? I ate but a third of my lunch.  I made the Jaali Bean Warmly Spiced Lentils & Rice, with a side of steamed broccoli.
I wanted to like it. Tried to like it.  But, last night as I was cooking the seasoning packet - I saw the fennel seeds. I HATE fennel/fennel seeds, in all its herbaceous bitterness.  I should have read the ingredients prior to purchasing, as I am really questioning my ability to take it for lunch two more times. 

Prior to that was Vega Vanilla Protein & Greens smoothie with half of a frozen banana, frozen strawberries, and water. 


I need a food do-over! At least there is tomorrow...

Weekend Bliss

It has been a mostly lazy weekend, with plenty of time of my hands and only a little "hurry up" and "be somewhere".  Just another big tease of summer break!

I had to buy a book for work, and naturally decided that I would spend the remaining balance in order to get free shipping.  Two new cookbooks:

I've seen every page in both books, and can't wait to try out some delicious new recipes (and old - Angela included my favorite Avocado Pasta in her book. Only one other recipe - pumpkin pie smoothie - was one I'd seen before.  Everything else I haven't had!)

I found myself running an errand close to Beet Box, thus I was obligated to support.
 Beet Brownie, and Turtle Beet Brownie.  The only logical choice for the latter is to immediately get a spoon.  Oh yes.
 Adding in some health: Carrot-Apple-Ginger freshly juiced, right in front of me.  The only thing is, Parsley has raised their prices by $1 per item within the last year.  It's hard to justify $7 for a 16 oz. beverage on a regular basis!
 I honestly don't see my recent habit of all things rice going away soon, so I'll just apologize now.  Here it is, in almond pilaf form, with sauteed collard greens and marinated tempeh.
Tomorrow is a teacher work day, where I will be required to attend a six and a half hour meeting/workshop with a "working lunch".  What a way to start the week... On a happier note, it's our last teacher work day of the school year! Yippee!!

Tasty Tuesday

As Ice Cube would say, "today was a good day".  Not in the way his lyrics dictate it exactly, but a good food day.  ;)
 TJ's Bran Flakes and almond milk.

TJ's Orange Chickenless Morsels (I sauteed bell pepper and onion with the chunks, then added the orange glaze), over Maifun noodles.

There was a dry orange is the afternoon, which wasn't great and I didn't finish it.  Spin class was tough, but at least it went quickly. And tomorrow is halfway through the week. So, it was a good day!  See you on Thursday...

Spring Break - Part 2

I can happily report that I'm fully immersed in the art of not having a schedule. Change of plans to include margaritas? Sure! Last minute phone call for a long walk with a friend and dogs? I'll be there! Frankie wants to come over for snuggles and play? Love to!

Upon discovering that all Sprouts are discontinuing Jaali Bean products (of course!), I traveled to a location that did have my favorite coconut variety.  While there, I was thirsty and this was on sale:
I held myself back from clearing the shelf, but I did buy one more pantry item that was also being discontinued:

 Continuing the spontaneity, here are a few more random pictures from yesterday and today:
 Shen-worthy lunch of avocado toast and an apple.  I made a huge batch of cheezy kale chips in the dehydrator, and have been picking at them both days.
 While I don't have a bedtime this week, Remy sticks to our normal schedule and puts himself to bed.  Here's how I found him last night:
(He has a haircut on Saturday - you'll get to see the result, naturally.)

Exercise: Cycle/HIIT yesterday was really hard, and I can't believe I'm doing it again tomorrow.  Today's Align & Flow had just enough vinyasa to get warm but the rest was all slow twists and stretches. (None of these classes are available in the evenings, so they will not be revisited until the second week of June!)
