Spring Break - Part 1

Hello! After an unintended week away - here I am! The rest of last week ended in a crescendo, leaving me exhausted and with an insane sinus migrane.  As in, couldn't drive or complete sentences.  I'm recovered now, but ended up busier than expected until today.  I took a few pictures along the way, but will have more for the following two installments of "Spring Break".

Chocolate Oat Bran & Coffee, on more than one morning...

On Saturday, mid mega-headache, I went in for a 90 minute massage (more or less when I realized that I shouldn't be driving).  She spent some time on my neck, scalp, and face to help with the discomfort (in addition to the full body).
 Exercise: Yesterday, I went to my first hour long yoga (not combined with anything else) class since August. I expected my hips to be tight from the thrice weekly spin classes but no... it was all in the shoulders! So incredibly tight, and I didn't even know it! I'm signed up for another yoga class on Thursday (Cycle/HIIT classes tomorrow and Friday).

I finally made it grocery shopping, to both TJ's and Sprouts.  Here is the collective haul:

 Everything in the last picture is being discontinued, so they were a buck or two each.  I mentioned to the cashier that I had tried the Coconut Jaali Bean only once, and was sad to see it go.  She thought perhaps it was only this location.  I'll keep looking, but will try these other two varieties in the meantime! Also, who discontinues quinoa/rice blends? It's not expired.

Keep Counting

While eating, I realized it was missing salsa (I have another serving for tomorrow). After work, I picked up some salsa. So I naturally needed to buy tortilla chips.  I then ate too many prior to spin class.
 Thereby having a salad for dinner post spin class.
I really wish I had a margarita with those chips and salsa. On a patio. How many more days till Spring Break? (3)

Weekend Wonders

A few images collected from a wonderful weekend:

 Shen's reuben from Saturday influenced my "linner" from today.  Native Food's Deli Style Reuben and a side of Native Fries.
 A long walk with Remy to aid in the digestion.  A little overcast, but still 70 degrees!
Terra update: she has been seen by the vet (again), and is taking anti-inflammatory meds and antibiotics to help control whatever reaction it is that is causing her eyes to ooze and be irritated.  My parents are also rinsing her eyes with saline daily, and as a result her eyes are open and she appears to have more energy! Still can't see much, but her quality of life seems to be better.

If you are looking for Vegan Shamrock Shakes or anything with green frosting - you will be disappointed.  I'm disappointed in myself! Ha ha! Where is my holiday spirit? Instead:

I didn't even wear green! People in my spin class were in green costumes.  Sweating in pale green lycra = nope.  Next year, I suppose.

Master Update

My parents returned from their 10 days trip to Israel, but I kept Terra for an extra day so as to let them sleep/ go grocery shopping / resume life.  They were saddened to see her decline, as her blindness has progressed quickly.  She is going back to the vet tomorrow, so hopefully they'll have more answers.  Our biggest concern is whether or not she is experiencing pain.  In the meantime, here are a few images from her last couple of days at my house: sunbathing...

After work, causing brief panic, I didn't find her in her bed.  Apparently, Remy's toy bed (because he doesn't actually ever sleep there) was closer and/ or just as comfortable.

My parents had a wonderful trip, visiting many historical and holy sites, riding a camel, shopping in the markets, bouncing in the Dead Sea, and according to my mother "eating Mediterranean vegetables, delicious dates, and a lot of pita bread".  My souvenirs/ thanks for keeping Terra gifts:
 Scarf, necklace, and Dead Sea Salt scrub and lotion.

 I still have recipes leftover from the previous week's Happy Herbivore meal plan, and hope to make them this week.  But first, I made another batch of the sweet and sour sauce, and cut veggies in chunkier style (a la Chinese take out).
 Green bell pepper, onion, carrots, and tofu.  I'll serve it over brown rice for lunch the next few days.

Also prepped, and from the meal plan, Citrus Couscous Salad.  I added spinach.

Rut Progress #2

Breakfast has been Vega Vanilla and water, so I will spare you the picture.  Yesterday's lunch was the second serving of Maple Orange Chickpeas. Dinner involved making Sweet & Sour Stuffed Bell Peppers:

Homemade Sweet & Sour Sauce (with pineapple and garlic!), red cabbage, onion, peppers, and brown rice.  There was plenty of filling left over, I ended up eating it for dinner. 
 One of the above pictured bell peppers for lunch today, and for dinner an old standard:

Avocado Pasta.

There are still three meals from the plan I've yet to prepare.  I'll make them over the next few days, and put them in my next post!

Rut Progress #1

I've mostly followed the meal plan as mentioned in Sunday's post.  I've varied on the breakfasts the most, simply because I need something super fast (thus, not oatmeal).  

Monday: PB and Banana in a tortilla.
Maple Orange Chickpeas over brown rice.
 Portobello Stew.

Tuesday: Grapefruit

The second serving of Portobello Stew.

Veggie Wrap (edamame hummus, cucumber, tomato, red onion, avocado, spinach, black pepper, Old Bay Seasoning).

Emerging from the Rut

I've been in food purgatory, bored with meals for a while.  I decided to combat it by purchasing this week's meal plan from Happy Herbivore.  I've done it before, perhaps a handful of times, and usually end up following 75% of it.  As it is a paid service, I can't share the recipes but I will share my food through photos!  I put together my list, and went shopping - around $40 total.

Above: Red wine vinegar, lotsa beans, canned tomatoes, breadcrumbs, tortillas (for wraps - there are a couple of options, but I chose these for their short ingredients and being a local business).  Below: cornmeal, flour, bouillon, tofu, cocoa powder, Tofutti.


This week's meal plan features: falafel burgers (I wasn't feeling them, so I perused older plans I've purchased and will substitute one of those meals), sweet & sour stuffed bell peppers, portabello stew, citrus couscous salad, veggie wraps, cocoa chili, crispy tofu strips... and more!  Expect to see these, plus any of my own substitutions, this week. Hopefully this will pull me out of the rut! (In case you are curious - meal plans are changed on Wednesdays, so the one mentioned above is available until late Tuesday.)

P.S. Terra is doing okay, I'm alternating long walk days with rest days so as to not exhaust her.
P.P.S. I FaceTimed with my parents Saturday, and they are well - loving Israel! The Dead Sea tomorrow...

I thought I would side-step my food post for today, and provide a few images from Terra's vacation with us while my parents enjoy Israel.  We'll start with my favorite - yesterday, post-walk, after the car ride lulled her to an upright snooze.

She's walking into walls and her balance is off.  Happily, she is eating, drinking, and interested in (slow) walks.  Once my parents return, I will ask for another vet visit - the rate of her decline is increasing.

Happy Tuesday

I am pleasantly surprised at how quickly this week is progressing.  True, I have a lot going on at work - so the days fly, and of course the chaos of two canines (although Terra's vision is really deteriorating, the vet says there is nothing she can do).  Regardless, Wednesday is nearly here so I need to show you today:

My parents landed in Tel Aviv without incident earlier today! See you on Thursday!

Whirlwind Weekend

Friday evening and Saturday morning were spent in preparation for hosting book club on Saturday afternoon.  We packed in 10 people plus three children into my 700 sq foot home.  It was really tight, and the sheer volume alone was a reminder why I'm not a regular party hostess!  I don't mind attending and staying as long as I can, but when it's at your house - you can't leave. Ha ha!  I put on my best face, and four and a half hours later - it was finished.

As we try to align treats to our book, my email invited them to bring circus themed treats as I would provide popcorn and punch (vodka on the side - it started at 2pm, I let the attendees make that decision!).

(If you're curious: cran-raspberry juice, pineapple juice, limeade, ginger ale.  Tart with a touch of sweetness!  Lime and raspberry garnish.)

Sunday was spin class and family time.  My parents are going on a tour of the Holy Land in Israel for 10 days, leaving in the morning.  They are going with their church leaders and a tour group, so well chaperoned and with a full agenda!  For my part, I'll be taking on Terra again (yes, only three weeks ago I had her when they were in Virginia!).  Additionally, today is Remy's 7th birthday!  Lots of treats and snuggles.

Now, I will relax and prepare for the season finale of Downton Abbey! See you on Tuesday...
