Summer Highlights Week #8

Since returning 10 days ago from Texas, I have done a lot of the same: workout classes, spending time with friends, and general relaxation. I also ate the same thing over and over, with only a few variations.  Lastly, I spent a lot of time outside, especially enjoying the 78 degree evenings we have had as of late!

 I also made zucchini bread. Trying to pace myself.
 

And with that, summer is basically over.  Next week I have to go into work for a couple of meetings, then it's full time on the following Monday. It does feel like it has been a long time since the first week of June, but that doesn't mean I'm ready to go back. Ha ha!  See you on Tuesday...

  1. Oooh, i love it when nights are in the 70s! We've had a few of those lately in nyc and its amazing. The watermelon and corn look fabulous, i can never get enough of either. (Ugh. My most recent watermelon was horrible and pale pink and such a waste)
    Good lookin' zucchini bread. I bet that would be perfect to freeze slices of for work day breakfasts.

    1. Yeah, once I got to the last section of watermelon it was not great. If only I had had the willpower. I ate all of the zucchini bread, mostly as a snack in the morning. And as dessert. Ha ha! But great idea to freeze it if I make another loaf!!

  2. Oh my goodness it's over already?! I can't believe how quickly it has gone by! I hope that you have enjoyed every minute of it!

    I love all of your summer eats! You know that I really love my watermelon and yours looks so.fantastic. The peaches look great too. I can't get enough of the summer produce.


    Nice job with the zucchini bread! It looks incredible. Everyone has been enjoying all kinds of yummy sweet breads. It's making me excited to make pumpkin bread soon!! Yay!

    1. I've enjoyed half of it. Ha ha! I could do without another flood!

      My last bit of watermelon was losing its sweetness, but the peaches are not disappointing!! So delicious!! I can't wait to pick up some more at the next market. Yum, yum.

      No! Not ready! No pumpkin, no peppermint, no gingerbread!! Summer, Sarah, summer!!! ;)

  3. Everything looks so lovely and summery! The poppyseed dressing is always nice to see. Do you make that yrself? I can't remember.
    The zucchini bread looks great! I haven't made any this year, though I did make banana bread. Same with lack of peaches, but nectarines abound.
    Anyway, enjoy yr time left!!

    1. Yes, I make the dressing! It's from Healthy. Happy. Life. blog by Kathy Patalsky. Such a great dressing, and it keeps for a while, only requiring a little shake/stir to get it right again.

      I made this zucchini bread recipe last year, and it is so good. I finished it yesterday. So, it lasted about three and a half days. *facepalm* Get on those peaches, lady!!!

    1. I wonder if it can't grow there? Latin America has tropical climates and can grow it, but maybe that's not a thing there? Ask at the next Farmer's Market!!
