Continued Snow

Our 8 inches of snow on Sunday was compounded yesterday with another 5 inches midday yesterday, and another 3-4 inches today.  Wet, almost rain-like snow.  Icy and 12 degrees, with wind.  What does it equal? NO SCHOOL! I'm happy for me, sad for my students because we have so much to cover.  Lots of homework coming up, kiddos!

 An almost neon yellow tumeric tofu scramble with Tofutti and spinach, dry wheat toast, black coffee.

A little chili to go with my cornbread.  

 Spinach and Tofu Ricotta Lasagna or flat-sagna.  

My spin class was cancelled as well.  I spent the day reading or listening to the audiobook of our book club selection (a title I picked out but never read last summer).  The audiobook is on YouTube (sorry, publisher!), and is read by a fantastic orator with a British accent.  I cleaned, organized, and purged all of my kitchen cabinets - I have a bag of goblets and such to take to the Goodwill - whilst listening.  Frankie came over to play with Remy for a bit, and there was a long nap. No complaints here!  See you this weekend (we're supposed to get more snow!).

Jaali Bean Review

As mentioned last week, I found a new (to me) product: Jaali Bean. I purchased it on sale, at Sprouts.

The contents include a bag of lentils and rice, and a spice packet.

I was especially excited to see whole cardamom pods and a cinnamon stick!

 Easy to follow instructions of toasting the spices in a tablespoon of oil (I used olive, as that is what I have), although be sure to stir constantly as the coconut flakes toast quickly!.

The instructions mention substituting coconut milk for half of the water, in order to make this creamy coconut dish even creamier.  Sign me up!

Bring to a light boil and cover for 20 minutes.

Let sit for 5 minutes, and enjoy!

I added steamed spinach to make it a meal in my lunches both yesterday and today - so delicious.  It has a little bit of heat, but not overwhelming.  I will absolutely re-purchase, and hope to try their other varieties soon! Their website mentions being sold at Whole Foods, so I'll see if they have a wider selection.

When It Snows

When there are 8 inches of snow, and it is 9 degrees; when all of your plans have been cancelled - what do you do?
 Laundry? Check. Clean house? Check. Swaddling my fur baby in a fleece blanket? Check.

I guess it must be time to prep meals for the week!  Chili with cornbread, half pan of lasagna (which will live in the fridge unbaked - until Tuesday night when I will need it!).

I have shoveled some, and I know that if I dig out my car today, I will appreciate it in the morning.  But will I do it?

I bring you... my lunches and afternoon snacks from this week.
Kale Couscous Salad - which after a week, wasn't in the best shape taste wise on Tuesday. Ha!

With our cooler temps at the beginning of the week, I attempted a recipe-less Potato and Corn Chowder.  I sauteed shallots, celery, and marinated tempeh in a little olive oil.  I then added a can of creamed corn, frozen corn, potato, and almond milk.  Lots of black pepper.

I will have eaten it three times this week - just the right amount, and it turned out to be pretty good.

New Things

My good friend who has been living in France came back to Colorado for a two week visit (her family lives here).  We met up yesterday for a two hour gossip, and she gifted me a few treats from France:

 This weekend while grocery shopping, I found this product and thought to give it a try:

The best part about birthdays: free stuff. I am a Native Foods Rewards member, and they loaded my card with $10.  I decided to go with Shen's recommendation:

I split it into two meals, and I'm still full.  Messy but very good.

A Birthday & A Wedding

I ate my spicy chocolate cupcake from Happy Cakes in the afternoon of my birthday:

Dinner with brother and parents at Rosa Linda's, where I had a veggie burrito.

A friend I met the first day I moved into the dorms at the University of Colorado, married her nine year boyfriend on Saturday.  They are fans of costume parties, and the groom created and runs the annual Denver Zombie Crawl.  Thus, they themed their wedding - a Black Valentine/ Til Death Do Us Part.  Guests (adults only - no children) were instructed to wear all black cocktail attire.  A Hurst was parked out front, and creepy, broken 1920s music was played on a phonograph.  They wrote eulogies for each other in place of vows (they were funny, I must say), and during cocktail hour magicians, ballerinas, and tarot card readers moved amongst the crowd. 

(All tables had really awesome centerpieces like this!)

You found your table assignment via mortuary toe tag, and part way through the first dance - the music and electricity were cut.  A percussion based electronic marching band (Itchy-O, these songs were played) walked in wearing black masks over their faces.  To say it was terrifying at the start was an understatement!  Then we danced with them.  I continued dancing along with friends for about three hours.

A Valentine's Day for the history books, if I do say!  I'm so tired, and still very dehydrated...

Slightly well done toast with pb and banana.

Collard greens, wild rice, oven roasted chickpeas, and Magic Miso Tahini Sauce.

Clementines in the afternoon - super yummy.

45 minute spin class, which was hard but mostly due to me feeling so tired.
And then I rolled into Whole Foods, nice and sweaty.

In order to receive the gift of Friday off, we will be putting in twelve hour days both tomorrow and Thursday.  Good times.  Next time we chat, I'll be on the eve of my four day weekend!

Too Quick

Make it Stretch

Somewhere between Tuesday and this morning, I realized that my meals were no longer coming from my desires. They were going to be based on what was in my house, considering I haven't done a proper grocery shop in nearly two weeks. Ha ha! My meals are just funny now.

Half of a frozen banana, frozen strawberries, water, and Vega Vanilla (nutritional shake, not Protein & Greens - I have a few servings left).

Last night, I made a half batch of the Skinny Bitch Red Wine Beefless Stew...with most of the ingredients.  I should have measured the broth, as I think I missed about a cup worth (still very good!). Lunch today and the third serving tomorrow for lunch.

A beat up apple in the afternoon, and a 45 minute spin class.

Steamed kale with Old Bay Seasoning, angel hair pasta with TJ's meatless meatballs and no pasta sauce... because I have none. (I may or may not have realized this at the last minute!)

Terra update: no photo yet, as she is spending her time underfoot.  I think her vision is failing, and so she is trying to figure out her new environment.  As soon as I stand up, she's following me.  A few more days, and she'll be adjusted!
