Keep Going

The return to work has been intense, and the usual chaos that wouldn't throw me under normal circumstances is definitely hitting me harder this time! But I know this is how I build stamina, and with earlier bedtimes, hopefully I will be back on my feet soon.  Something that I haven't mentioned here, but one of the side effects of my illness is laryngitis.  Happily, all of my 11th graders are letting me have a screechy/husky voice in peace. Ha ha!

Avocado toast for breakfast:
 Couscous Kale Salad and an orange for lunch.
Some almonds and a Hail Merry macaroon in the afternoon.

Pasta and marinara with TJ's meatless meatballs for dinner:

I'm brushing my teeth and heading to bed... see you on Thursday!

  1. Oh I know you must be exhausted. I hope that you'll be able to get a lot of rest in between the craziness and that your energy will come back soon.

    It looks like you are making sure to make your meals nutritious to help get over the yuckiness! That lunch is packed with nutrition and it looks yummy as well! I've been craving citrus like crazy lately. Annoying that I need other people to peel my oranges... stupid allergies. The avocado toast looks amazing!

    Hope the next few days go quickly for you!

    1. Yesterday I came home early and napped! Ha! I'm happy it'll be Friday tomorrow. :)

      It makes the oranges all the better - having someone else peel them! You know that avocado toast only exists thanks to you! I definitely am trying to pack in the nutrition, willing myself healed.

  2. Good grub. I always do five meatless Meatballs. Sorry it is taking you so long to recover. I am just so scared to catch the flu.

    1. It probably doesn't help that I've never had a flu shot, and prior to now, I've never had the flu. I guess it was a good run! ;) I think you won't get it considering you can work from home - maybe you should do it full time! The critters would love it!

  3. I'm feeling you on the return to work, it's never a pleasant thing, and especially unpleasant this year in the circumstances. Hopefully the curative powers of kale and avocado will work help!

    The kale and couscous dish looks fantastic. Really healthy and pretty. I don't know if I'll ever buy those TJ meatless balls but saw a good bean/tempeh ball recipe recently that I'd like to try. Have you ever made yr own?

    1. With all of the talking I've had to do this week (and the fact that I'm 80% better) means that I'm down to a little raspiness at the end of my sentences. I can't wait to sound normal - especially because my job is public speaking for five hours a day.

      I haven't made my own meatless/beanballs! But I should!
