Wrapped & Sealed With a Kiss

Here is a final post for the holiday season, and for 2015! I can't believe the year is already at a close!
This is from the lobby at The Brown Palace Hotel, very festive. Also festive (and delicious) was this sweet bread made by a friend:
This week I've had Cocoa Oat Bran more than once for breakfast:
Leftover minestrone soup from Christmas Eve, and homemade cornbread muffins:
Vegan Tempeh Reuben sandwich from Subculture:
A batch of cheezy kale chips on the dehydrator:
I am so grateful for a blessed and healthy holiday season, spent with family and friends! I hope your December has been wonderful, and wish you all a Happy New Year!

Merry & White

I spent the rest of Christmas Eve, and through this morning, at my parents house. Even though I live 25 minutes away, having a mini holiday and spending half the day in one's pajamas makes the big day extra relaxing!  A few photos from Christmas Eve:
Remy, gazing at the family tree - perhaps eyeing his new ceramic food bowls under the tree.  ;)

Homemade minestrone soup and snack tray for dinner:
It started snowing in the morning, and continued off and on throughout the day.  I forgot to take a picture of my plate (TJ's Turkeyless loaf, candied sweet potatoes, steamed green beans with toasted almonds, bread), but here is the tablescape and the evening snow:

Lastly, Shen had asked for about my gifts.  I asked specifically for stud earrings, jewelry cleaner... And a wood floor mop. Ha ha! I know, so practical.
As you can see, there was also a necklace (two actually - I was wearing the other one), a gift card, and socks. Not shown: the mop.

Looking forward to the second week of vacation, but not necessarily a New Year! My goodness time keeps moving too quickly! Holy moly! See you soon, hoping your holiday was wonderful!

Holiday Blessings

The last few days, the first of my holiday break, have been filled with family and friends! I'm feeling so blessed, and it really reminds me this season is about faith and those closest to us!

My mother and I put out the Charles Dickens Village...

Pancakes again for breakfast!
Visiting my cousin and her family, soaking in more spirit!
My last solo meal for two days:
I'm already at my parents house, wrapping gifts, baking, and singing carols.  We'll head to Christmas Eve services and enjoy dinner together.  I'll be sure to document tonight and tomorrow as much as possible, and share it on Saturday! Happy Holidays! Merry Christmas!

Countdown to Christmas

After the unexpected snow day, the holiday activities resumed! Wednesday night, I stayed out way too late seeing a friend in a play, and attending the reception...
Thursday night Christmas shopping (I'm now all done!)
Friday night, I skipped my work party and went to my neighbor's house for a small neighbor party.  Here's Frankie warming himself in front of the heater vent.
A gal at the end of the block made edamame with ginger and chilies. I brought some home! So yummy!
Yesterday, I attended cookie party #2, and made frosting with powdered sugar, Earth Balance, and water. The cookies were homemade, and included a vegan batch! I ate four, and felt sick. (It might have been helped by the three glasses of wine, as well.)
The Christmas tree at their house was very festive as well!
And now the last four days until Christmas! I can hardly believe it! I plan to post on Wednesday, sharing more holiday cheer.  I feel so fortunate this year to be in good health, and to be fully embracing the season.  See you soon!

Winter Holiday

Surprise! A post during the week! This post is brought to you by 9 inches (and still falling) of snow, resulting in school closure. So, let's work backwards: images from this morning's winter wonderland.

More Remy, in a poorly lit setting last night, in front of the fireplace at my brother's place:
He's wearing his Santa Scarf. Adorable.

Sunday evening, I took my mother to the ballet:
Really beautiful and entertaining. The music alone is worth attendance!

Lastly, Sunday afternoon I made my last Jaali Bean Coconut Lentils & Rice and broccoli for work lunches. I only needed three, but now who knows - final exams were to have started today through Thursday. I'm not sure how they'll be re-scheduled!
I hope you are all having a great week, and I'll be back this weekend with more holiday fun!

Merriness Continued

Operation Best Holiday Season Ever is still in full swing.  Cookie party #1
Purchased only a few items for decorating (including the two foot tree) my house:
My weekday lunches were red, green, and white - also very Christmassy.  Red quinoa and basmati rice blend, steamed kale, Happy Herbivore Mushroom Gravy.
Coconut Milk Latte from a colleague friend, sitting on my desk.
This next week is pretty packed, so you can expect either two posts or one big post next weekend!

I was supposed to go Christmas shopping today, but it has been snowing since 10am and is scheduled to continue until midnight. Remy has assisted with laundry, a few episodes of "Vikings", and is currently swaddled (my idea) in a blanket on the couch. This is the life, folks! See you soon...

Feeling Festive

I'd say that despite the heaviness of the week, I was able to get into the holiday spirit!
On Cyber Monday, I purchased a couple of things, including this $12 reindeer sweater. As soon as it arrives, I'll be wearing it continuously.
I've been eating this deliciousness by the handful! Yum!

Neighborhood houses are in full decorum.
This one was set to music and the large tree on the left was changing colors. Awesome.

My lunches this past week consisted of Thanksgiving leftovers. I still have half of TJ's Turkeyless Loaf, but I need a break. No more until Christmas!
Remy went in to the groomer for his holiday haircut.
And yesterday, I attended a holiday concert with my aunt, uncle, and cousin. Nothing like a sing-along with kids to get you in the spirit!
This afternoon I'll be attending the first of two cookie decorating and craft events this month. Woo hoo! Wishing you a wonderful week!

A Thankful Holiday

In August, my grandmother in Kansas announced that we would all be going there for Thanksgiving, as she wanted to be surrounded by family on the anniversary of grandpa's passing.  Life happened, and 8 people were waylaid by injury or ice storm but we had 13 adults, 1 baby, 5 dogs, and 3 cats at the farm for the holiday.  No arguing, no crying (we talked only once of grandpa), just lots of catching up, and love.  It was a great Thanksgiving!  We started the caravan of cars driving east on Wednesday morning, and I brought provisions:
My aunt who lives on the farm also had black bean burgers, and set aside mashed potatoes and brussel sprouts without dairy.  So nice! Otherwise I snacked on nuts, crackers, veggies, hummus, and sweets.  I didn't take many pictures, but here are the board games enjoyed Thursday and Friday night (yes, some were watching football and not playing!).

We returned yesterday, late afternoon. Tired, but with happy hearts. (Remy had a great time as well, and has been sleeping off and on since out return! Terra came, too, and received lots of love.)
I am planning on having a spectacular holiday season this year: cookie and craft gatherings, colleague festivities, choral concert, Nutcracker tickets... Just no decorations, as they were ruined and thrown out due to the flood (storage unit flooded and grew black mold). I'm trying to convince my father to lend me some of his Charles Dickens Village, since they never put it out, so maybe I'll have something. What are your holiday hopes for this year?

See you soon!

Recent Consumption

Looking back, last week went really quickly! I'm grateful for that, and for the week ahead of family and time off from work.  Last Sunday, I prepped most of my lunches for the week:
Final result:

I tried all of Vega One flavors, and I think I still like French Vanilla the best.  Here it is, blended with a frozen banana and vanilla almond milk. Such a vibrant green!
Mocha with frozen strawberries and water:
Definitely my least favorite.  I like the coconut almond a little bit, and the vanilla chai is fine, too. I can definitely feel the difference in my day when I start with 6 servings of greens, vitamins, and protein! It was less appetizing on the cold mornings, but I'll be sticking to it.

A couple of dinners from the week:
Baked potato, steamed kale topped with Happy Herbivore Miso Gravy and Roasted Pepitas.

Fettuccine noodles with marinara and TJ's Meatless Meatballs.

I can't believe December is around the corner! I hope you enjoy this week with those you love, as we enter the holiday season!

Just a Few

I was remiss in my week, and did not take but a couple of photos. So, let's get started: inspired by Sarah's love for Bento boxes, I finally found some heavy grade plastic ones to use.  I made Smashed Chickpea sandwiches, olives, and an apple as my lunch last week.

I ended up in front of a Caribou Coffee when in my parents neighborhood. I tried their Ginger Chai Latte (delicious!) with soy milk.

Over a month ago, I ran out of Vega.  I thought I could live happily without it every morning. I was wrong. I might have overdone it, but I'm happy. ;)

Last week before our Thanskgiving Break. Woo Hoo! I'm loving November; this month has been such a wonderful change from October!  See you soon...
