On the Move

On days that I am running behind (ahem, like today), I have a stash of oatmeal hiding in my cabinet.
 Breakfast solved:
 I did it! I finished off the soup I made weeks ago. 
I don't want to see another lentil for at least a month.

Picked up dinner from Whole Foods after another tough 45 minute spin class.
Mexican Food: red chile, yellow rice, green chile, black beans, and a flour tortilla.  

Grandpa is being released tomorrow morning, and they want to go home on Saturday (someone will drive them halfway, and my uncle who lives in their small town will meet them).  My mother has really bore the burden of taking care of my Grandmother during these last weeks, so hopefully she can relax next week as we have a quiet Thanksgiving!

  2. So glad to hear that your grandfather gets to go home and rest in the comfort of his own home. I hope your mom will enjoy a relaxing thanksgiving and can enjoy herself.

    Great looking meals! It's great to have a healthy option like that oatmeal on hand in a pinch. It seems like everyone is making soup that lasts for a long time! Great looking dinner too, the Whole Foods hot bar is the best.

    1. He's en route to his house as I type! I just spoke with him, and he is so excited.

      I can't even think about making a large pot soup again for awhile! I need to make four servings or less. Ha ha!

  3. Mr. SV ate the rest of my homemade vegetable soup tonight. I was so grateful.

    Speaking of which, your family will definitely know what they are grateful for on Thursday.

  5. Oatmeal's a much better option for when you are running late than whatever I usually grab.
    I know the feeling of being so happy to finally finish a dish! Cooking for Thanksgiving might be more intensive for so many people, but I'm glad to not have to finish a dish that serves 6 all by myself. I'm heading to my mom's today to help clean - hope yr mom will be able to rest a bit too.

    1. It's the cleanse I did last month - I haven't had a bagel since early October, and now I've trained myself to not drive my car there in the morning and have oatmeal instead! Ha ha!

      I just need to make smaller portions! Eating something for six isn't fun for any of us. ;)

  6. Your comment about not wanting to see another lentil again had me chuckling in recognition. I go from 'lets make a big bowl of this to last the week' to 'please, not this again' all too quickly!
