For a Reason

I meant to post all of these photos yesterday, but a visit in the evening set my sails in a different direction.  More on that in a minute...

The day started with an Amazing Grass and water beverage, followed by the Larabar sample (eaten in the car) from last week's swag bag. Remy had an early grooming appointment.

Mission accomplished, and eyesight obstacles removed:
 Inspired by Shen's trip to Native Foods, I picked up a Reuben (and fries - didn't get the picture).  I ate the second half (pictured below) for dinner.
 I prepped a salad for school lunches this week, using these ingredients:
 My parents came by last night (my mother had been in Kansas all weekend, getting my grandparents all settled in their assisted living apartment), and shared some sad news: my grandfather has a rapidly growing tumor in his brain. It's the size of a baseball, and he is declining daily.  At 91 years old, his body couldn't handle surgery or chemo, so now we wait for option number three. He has an appointment next week, here in Denver, so at least I'll get to see him. I'm happy to know he's not in pain, but he is so confused and repeats himself over and over. My heart breaks for those of us left behind (especially my grandmother and mother).  All of the chaos of my job quickly melted away, and I'm reminded about what is important: people and those you love. Hug someone, tell them you love them - life is precious.

Three Mile Creek Trail

Disclaimer: this trail is not three miles, but my guess is that the creek is three miles in length.  If I had been up for it, I might have done the 13 mile round trip hike - but instead it was more like 2.5 miles.  A beautiful, moderate level hike (climb up and down boulders in areas, crossing the creek several times on a log, some points of serious incline, otherwise fairly flat or low grade), at the southern tip of Guanella Pass  (pronouced Wuh-nella, we started closer to Grant, not Georgetown, if you click on the link).

The road to this trail was about 10 minutes on dirt (by car) from the Highway...

This one is my favorite:

Remy did really well, despite his severe need for a haircut (his appointment is tomorrow morning!).
My brother joined us on this hike, and it was really lovely all the way around.  Of course, we were not alone in our desire to see the fall folliage, and we spent two hours in the car just to arrive (should've been an hour and 20 minutes from Denver).  We ran into other people and dogs every 10 minutes or so while on the hike, many of them also carrying their camera!

Sunday, I teased you with the enchiladas in the oven. Here's how they looked when I the time rang:

 A little spicy, but the heat isn't overwhelming. The filling (potato, kale, Daiya) is delicious! I've taken them to work for lunch, as the only way I know to reheat them is using a microwave (since April I've not had a microwave at home).

Also wonderful: the Amazing Grass selections I picked up.  The one below is the Tangerine Immunity, only mixed with water. Very pleasant, but I still chugged it to make sure I didn't change my mind and miss out on nutrients.
I've been a good girl, and held back on having pumpkin before the official start of autumn. Now that it's here, I'm plotting my first plunge into the (metaphorical) pumpkin patch.

Catching Up

The week got away from me, and I got behind.  Thus, I bring you many pictures to peruse! Firstly, a beautiful sunset captured last week:
 When shopping, I saw these little packets on sale, thought of Shen and her overall endorsement of Amazing Grass...

 I participated in a 5K walk for Pulmonary Hypertension (Remy came along, too).  A colleague friend has the disease, so I donated my dollars and morning to the cause.
Swag bag:
 The items on the left of the hand clapper will go to someone else as the popcorn and Odwalla bar contain dairy. The round biscuits are blueberry cookies for Remy.

 Great for grazing in the afternoon:
 I put my fire roasted chilies to work, by making enchiladas.
 Kale, potato, onion and Daiya filling.  

 Peeled chilies, chopped garlic, chopped onion, tomato (boiled after this picture to remove skin - reserve some water for use in the blender).

The product yielded six stuffed fajita-sized flour tortillas, and they are currently in the oven.  I'll share the final result in my next post! I hope your weekend has been wonderful!

Autumn: Such a Tease

Even though summer-like temperatures have returned, I am keeping my meals (mostly) on the warm side. PB and banana toast, leftover raw pad thai, and a baked potato with roasted broccoli and It's Better Than Sour Cream.

Ah, Weekend!

I am so thankful for weekends in general, but I appreciate this one because it was a perfect blend of productivity, social activity, and rest. I'll take one more, please!  And, we've had a summer relapse - 89 degrees today.

Saturday morning trip to the Farmer's Market: fire roasted Hatch chiles (from New Mexico, medium heat), corn, broccoli, and a Beet Box brownie (they always have a stand, but I usually resist temptation).
 I met a few friends for lunch at Spices, and while I didn't photograph my Chopped Salad "romaine, red onion, tomato, cucumber, and avocado (swapped for the cheese)", I did photograph our trip across the street!
 Ha! You can see one friend's reflection, and the other friend's foot in the air as she was posing for a picture.  Inside Voodoo Doughnuts:

In case you are new to the Voodoo schtick - it's all sexual, all the time. Phallic donuts, double entendre souvenirs- so yes, the bag says what you think it says. But the doughnut was effing amazing. Light and airy - I ate it all in one sitting.

Sunday was basically one big "Ode to Sarah", as I had oatmeal with coconut, almonds, and dried cranberries (and black tea)
 And, I made raw pad thai - inspired by this post - while not as photogenic, it was fun to make and pretty tasty!
 Spiralized zucchini, broccoli slaw (red cabbage, carrots, broccoli sticks), green and white onion, shredded green cabbage, homemade spicy peanut dressing, and peanuts.
This made something like six servings, so I'll be having this quite a few times this week!

Is anyone watching "Outlander"? I read the first three in the series years ago (we're talking late 90s, early 00), and while I'm remembering some of what happened but not all, the show is really well done. Let's give the casting team a raise because Jamie is gorgeous. So hot. I can't. OMG.

The Swing

Today's high: 52 degrees, with showers.

Vega Vanilla (the last of it!), frozen banana, frozen mango, water = frozen me.

Lunchbox: snap peas, carrots, falafel, garlic hummus.

I wanted hot chocolate, but my cupboard hasn't had that in a while. So, a pb rice cake instead.

I knew that today was going to be chilly, so I've kombu broth brewing in the fridge.
A nice steamy bowl of homemade miso soup. Truth be told, I wanted pho, but my pho friend had a date. (She said she'd rather have pho than go on this date, so we'll go sometime soon. Ha!)  I think it's time for hot meals, all the time.  Farewell, smoothies - see you in the spring...

Here it Comes

We've had a taste of autumn off and on the last couple of weeks, and today was no exception. In fact, each day this week is progressively cooler with a chance of rain.  That sort of shift makes me change my eating habits! I am already craving more hot food, and I'm not sure I'll have smoothies for breakfast beyond this week.

Work wise, it has been better - we're just so busy! I was gone from the house for over 10 hours today (poor Remy!), and I have work to do once I post this. At least I'm sleeping enough, and doing yoga at home (yes, this means my long day made me miss the class I wanted to take. Trying again tomorrow.)

 Lunch: on Sunday, I roasted green beans, cremini mushrooms, garlic, and cubed tofu in the oven with teriyaki sauce.  Served with brown rice.
During our Faculty meeting, I munched on pretzels provided by the admin.


Perfect for a pre-autumn evening.

Re-stock, Recover, Re-start

This weekend was more than a little R&R, it was a full recovery from the work week.  It started on Friday night with a trip to two stores (mainly because I was indecisive and shopping without a list), three if you count the separate transaction at TJ's Wine Shop.
 Dinner: Super Spinach Salad, one and a half glasses of whichever one it was I opened.
 Saturday breakfast after nine hours of sleep:
 Oat Bran with vanilla, cinnamon, and agave. Iced coffee with almond milk.

Lots of rest throughout the day, and a Rockies vs. San Diego Padres game in the evening.
 ("The Player" is the statue you see, and it is where everyone who doesn't arrive with their friends/family meets before a game.)
Great seats and even greater weather.
