Soaking Up Summer

There was absolutely a second piece of zucchini after this one.

Almond Latte from Pablo's  (where I worked on school stuff for a couple of hours this morning)
 Summer Rolls (picked up last weekend from King Soopers, they came with a sauce but it's first ingredient was HFCS)
 And watermelon for lunch:
Long walk with a friend and Remy.  Remy and Frankie play date. (I will eventually get them to pose for a picture together! Home practice yoga (because tomorrow morning I have a tough class with the same gal from Tuesday!)
Dinner of summertime champions:
100% chance of an ice cream sandwich happening in the next 30 minutes...

    1. Your wish is my command, I got a picture of Remy today. ;) No Frankie yet, as we've haven't hung out since Thursday. Maybe I'll throw my camera over the fence, and ask him to take a selfie.

  2. I'm with Shen, this is a really great food day! I'm so wanting some zucchini bread now, yours looks so amazing! Do you warm yours when you eat it? I may have to make some... maybe when I'm house sitting for my bro (I go next Saturday, yay!). The latte looks really lovely, I still wish more places offered almond milk here.

    The summer rolls look really nice and fresh and the watermelon also must have been refreshing. I'm going to have watermelon for breakfast tomorrow :) Your oven fries always come out great, is there a trick to getting them nicely browned and crispy?!

    2. The zucchini bread recipe is great because it makes it only one loaf, which helps me pace myself. Ha! I hope you do make some!!

      I just ate the rest of the watermelon. I feel satisfied with my melon consumption for the summer. ;) I use canola oil spray on a cookie sheet prior to placing the potato slices, and then give them a flip half way through cooking!

      You'll see Remy in tomorrow's post! He loves Frankie so much. Since Frankie is a "communicator", Remy will hear him in the backyard and whine to get outside himself!

  3. I don't blame you for having a second piece of that bread. I certainly would! It looks like it turned out perfect. Great summer food all around. I don't think I'd ever grow tired of eating summery stuff. It's all so good!

    I'd love to see a picture of Remy & Frankie together. So cute!

    1. It turned out so well! It is hard not to finish it off sooner. Ha ha! I finally picked up some beautiful tomatoes at the Farmer's Market this morning; it has been a long wait since they are late this season.

      I hope to snap one of them soon, but for now they just "visit" over the fence.

  4. Did the ice cream sandwich hit the deadline?! That courgette bread looks really appealing right now. I bet it would be the ideal accompaniment to a cup of tea!
