All Good

Frozen banana, vanilla extract, almond milk

TJ's Super Spinach Salad (quinoa, edamame, cranberries, garbanzo beans, carrots, pumpkin seeds, and spinach.  Carrot Ginger Miso Dressing.) Very good! Will buy again!

  Cappellini with broccoli, mushrooms, and green onion tossed in the leftover cashew sauce from last week.

 Who is going to miss whom, when I go back to work next week?

    Such a bittersweet Remy photo. Surely you will miss each other equally.
    Thanks for the tip on the TJ salad. They are near enough work that I have considered buying something cheap for lunch, but never really wanted to deal with the choices (or the line...)

    1. I know - but once I tell you how long I've been off, it'll seem less so: 10 weeks! I'm willing to go back to a routine and teaching, but I'm dreading the exhaustive heat inside the building. It'll take a month or more for it not to be in the 90s in my classroom.

      I wasn't too sure about the salad, but it was so good! Nice sweet/savory combination plus all of those nutrients.

  2. It drives me nuts that TJs doesn't have more vegan grab-n-go options; I'll keep a lookout for this one. I had a couple of days off & I swear 89 was pushing me out the door.

  3. I third the thanks for the TJs Salad rec. I think I tried one of their Burritos many years ago and did not enjoy it. How can you be returning to work next week? What about your trip to Florida?

    1. My trip to FL is postponed, for both financial and chaos - my friend has three kiddos under seven (and a husband, so four kids. Ha!), and feels pretty overwhelmed by everyday life. I'm hoping to convince her to do a few days at the beach next spring/summer and I'll rent a condo for a few days!

      This is my 10th week off (it has never been this long; it's usually 8), so I suppose it had to happen sometime. ;)

      The salad is listed as vegetarian, but when I looked at the ingredient list the only potentially non-vegan item was the sugar (used for dried berries). The majority of their salads are carnivorous, which is unfortunate because some of the other ingredients sound good.

  4. Leaving my girls is the worst part about going to work for me. Does Remy give you a sad face when you say goodbye to him?

    I love frozen banana in a thick smoothie like you made it. So good! Great looking salad, as well.

    1. Remy cries, it's so sad. A high pitched whine when I'm at the sink in the bathroom or standing in front of my dresser. He has been very attached lately, I think he knows! :(

  5. REMY!!!!!!!!!!!!!!! That is the saddest and cutest picture ever. Such a sweet boy, poor thing is going to miss you so much when school starts. I can't believe how quickly the summer has gone! At least you can say it was an eventful one ;)

    I've seen that salad before but for some reason I've never tried it. I'm with everyone else, thanks for the solid recommendation, I'll definitely pick one up and give it a try! The pasta looks yummy too!

    1. It is a defeated look on his face, poor guy. I think he knows. I'm trying to tire him out with longer walks/activities - and will continue to do that once I'm back to work. You're right - it has been an eventful summer!

      I hope you do try the salad - I loved it! It does seem like TJ's is skimpy on the veg-friendly premade meals, so I'm glad to know this one is a good fallback!
