Hotness (Cont.)

Today's field trip focus was finding jobs in the medical field.  We visited a hospital, and the Denver Animal Shelter.  It is a new facility, and a no-kill shelter.  I held a skinny three month old mixed breed puppy, whom they found in a box in an alley about three weeks ago.  It was hard not to cry.  In fact, it was hard to see all of those faces, albeit in clean cages with fluffy pillow beds (and heated floors in the winter) and very nice staff (we were there for an hour, and minus the vet tech who was giving us the tour - everyone bustled around, not minding us). I wanted to take a few home with me!
Yes, that is a giant glittery canine out front.  A few of our students applied to work as volunteers, which I consider a success! However, between both destinations and another three miles in the hot, hot sun - we were fried.

Leftovers for Lunch:

Quick and cool dinner:

Due to my heat exhaustion, I did an easy home practice of slow flow yoga.  Tomorrow is a teacher work day, so no more field trips (til Monday)! Hall-le-lu-yer.

Hot, Hot, Hot

Final exams are over and graded, which means it is time for field trips and project based learning.  My colleague and I put to rest our Justice System course, and are embarking on exploring different fields for each of the days we work with students.  Today, we spent the good part of the time outside of the building, focusing on the Hospitality industry.  We toured a local state university's program in hospitality, and visited the venerable Brown Palace Hotel.

As you can see, I forgot to snap a picture of the exterior, but I did get one inside:

As such, we were walking the entire day.  It's 84 degrees outside. I am now sporting a sunburned face and lips, and will need another shower.  Home practice yoga after three miles in the sun... Yes, there were "flipped dogs".

I started my day with a little more density, in the form of Tofutti and a toasted Everything bagel.

Bought a "snack tray" (I gave away the cheese it also had) while the students opted for fast food.

Still hot, sweaty, and tired - I went to Whole Foods for a salad and a sourdough roll (already ingested, not pictured).  Balsamic vinaigrette from home applied afterwards.

What career are you exploring tomorrow, you ask?  Entrepreneur enterprises. . .we're going to local businesses. And no, not a dispensary.  I'm off to write a mini lesson on Business degree requirements, see you on Thursday!

The Holiday Weekend

There were a couple of events happening in Kansas this weekend, so Remy and I tagged along.  We left early Saturday morning, watching the clouds roll by...

Being lazy...

Playing dominoes...

Walking around the "downtown"

Eating (some) of the food I brought along:

Conversing, laughing, not sleeping enough - but I guess that's the trade off for visiting extended family. ;)

We left this morning, trying to benefit from the good weather, as another round is anticipated for later today.
Harvest is looking a bit late this year, and my brother and I might be across the pond at the time.  However, if we can squeeze in another trip in late June - we'll go!

See you tomorrow with a regular Tuesday post! Happy Memorial Day!

Weathering the Storm(s)

As you probably have heard, we've had some severe weather in Colorado the last few days. At nearly the same time in the afternoon - both yesterday and today, the last 45 minutes of the school day were spent sitting on the floor in the hallway, as we waited out tornado warnings.
While I went to the studio to work the front desk, and take a YogaCycle class last night - this afternoon I stayed home, and did a 30 minute yoga practice with Spotify's "Post Yoga Glow" station. Sun Salutations, followed by a few twists and hips, and working on my newest accomplishment: "flipping my dog".  Starting in downward dog, and lifting one leg...

Then flip over - lifted leg leading over the body, landing like this:

Breakfast of Blueberry Clusters (although mostly flakes in this shot) and almond milk

Avocado Rolls for lunch

Post yoga strawberries

Oven roasted potatoes with Italian Seasoning, and steamed kale with Miso Gravy

There were also plenty of pretzel sticks consumed while I waited out the tornado warnings...

I understand the east coast is now receiving some of our fun weather, and to you living there - stay safe and dry!

Repeat Worthy

Most of today, I would happily do all over again.  Especially with the meal choices, and afternoon yoga!
Simpler Detox Drink: lemon juice, water, ACV

Coconut So-Delicious Yogurt topped with blueberries and Maple Granola.

Kale salad mix with dried cranberries, almond slivers, and homemade poppyseed dressing. Doesn't look fantastic, but it was pretty tasty.

I picked this package up a week ago, and finally got around to trying it: (pardon the tear, I realized I should photograph it before cooking it up)

I do have frozen stir-fry veggies I could have added, but wild rice and steamed kale sounded so good.  The final result was really, really good.
I'm picky about teriyaki sauces, and this surprised me by being so tasty.  Now, if only I could remember which store I went to when I bought this package (they had other flavors!)...

A Handful of Weekend

Homemade Waffle, accompanied by pb, maple syrup, and black coffee.

Toasted Everything bagel with Tofutti

A visit with Terra on Saturday evening.  She had to have some teeth pulled, but she is now healing, eating well, and has the same energy as prior to her trip to the vet.  It's no fun getting old!

Classic Line Up

Looking back at my food choices today, I notice that I have gravitated towards the old favorites. Or at least meals in the top five in each category. Firstly, Kashi Blueberry Clusters (Oatmeal Squares and Crispix hanging out in the cereal favorites right along with it).
Restaurant created salads aside, the Taylor Farms Asian Chopped Salad with mandarin oranges is my favorite "not prepped by me" pre-bagged salad.
In the dinner pasta category, I think Spaghetti with Nate's Meatless Balls is tied with Pasta Con Broccoli.

Trying to be a daily ritual:
the Happy Herbivore Detox Drink (imbibed prior to breakfast this morning)

Home practice yoga: trying out this Manduka mat the studio owner let me borrow (it's one of her personal mats - so nice!).  I've mentioned to her a few times that I have to use a hand towel at the top of my mat during flow classes, because my palms get sweaty and slide when in downward dog.  Manduka mats are supposed to help with that.
So far, I like it for home practice. In studio I still need a towel because while it's not hot yoga, it's still warmer than my house... Nonetheless, I love that she let me try out this $100 mat with a test drive this week!

Happy Weekend Eve!

Here's the truth: my eating habits are better when I drink the Detox beverage in the mornings. I'm going to resume that habit in the morning.  But for now, enjoy my grain-rich meals from today...
Kashi Heart to Heart Blueberry Clusters with almond milk.

Mushroom & Spinach Barley Risotto - very rich.  I also had baby carrots, but didn't photograph them.

Whole Foods Hot Bar: Coconut Rice, Matar with Tofu, Asian Sesame Salad.

Sadly, no yoga today.  And I really needed it! Ha! Is the week over yet?

Stretch & Grow

Last week, one of the locations where I practice yoga, and participate in Spin class, had to close its doors.  There were issues with the `landlord, neighbors, and more.  It isn't the location I work/trade, but it is the one where I take the most classes.  The owner is in the process of adding classes to the other locations, but still it is a little sad.  That said, I don't know what my workout schedule will look like for a week or more.  Monday - Wednesday should be predictable, but with the disappearance of my very favorite YogaCycle class on Saturdays - the space is wide open, and unknown!  Working with the theme of "stretching & growing", I spent four hours in my garden on Saturday, prepping the ground for flowers (to be planted in the coming weeks), weeding, and putting out a new layer of mulch.  It's pretty gratifying work (and tiring! I can't believe I went to yoga afterwards.  I'm super stiff today.) Now if only my paycheck could "stretch & grow"! Ha! Here are some images from the weekend:

(Above: potted flowers gifted for Mother's Day. Mom loved them.  Below: Remy, exhausted from watching me dig up dandelions.  Also, he appears to have only three legs in this picture.)
Exhibit B: this is what happened today. Thus, waiting to plant flowers.
Experimenting with barley.  Making Mushroom & Spinach Risotto for lunch this week.
Based on this recipe, but halving it and not adding sundried tomatoes. It smells fantastic, but it is taking a really long time to cook.

See you on Tuesday with a full day of eats and activity! I hope your weekend was wonderful!

The Countdown

Four weeks from tomorrow, the school year will be over! Woo hoo! Bring on summertime happiness! I should do a lot of things, but who knows what I'll actually be doing.  Here are some ideas on things I want to do/achieve!

1. Work on my yard.

2. Work on projects around the house.

3. Improve my yoga practice

4. More hikes!

5. Try out new crafts

6. And of course:

There will also be un-fun activities like working on curriculum, and another round of minimalism (in the form of cleaning out more drawers and closets).  However, I am hopeful for a baseball game, new fitness classes, and more time with Remy and humans I don't see often enough.  I'd love to hear what you are thinking about for the summer months!  See you soon!
