Two in One

Both yesterday and today had the same breakfast and lunch:


Dinner from last night: Saag, Garlic Hummus, Chapati

Tonight: Breakfast Burritos
 Filling consisted of tofu, pinto beans, spinach, tumeric, sea salt & pepper, onion powder, and nooch.  In the end, smothered in green chile.

Wednesday workout: RideTRX (climbing intervals on the bike, super sore triceps from TRX)
Today: Gentle Vinyasa (hips, quads & hammies, lower back)

  1. Oooh nice with the chapati.
    And breakfast for dinner is the best. I used to love eating at a friend's house when her mom would make pancakes with canned peaches for dinner. This healthier fare can get away with it a little better though.

    1. A little labor for delicious flatbread! My mother would occasionally have breakfast for dinner - waffles or pancakes, and that was always the most fun!

  3. Oh man, I could write a poem to chapatis! So good. There's a couple of vegan brands over here that are pretty nice - I love a big bowl of dahl with it. The lasagne looks great too - where's that from?

    1. I've never had store bought chapati (mainly because I've not seen it!), but the recipe out of "1,000 Vegan Recipes" is relatively easy. The lasagna is also from my kitchen!

  4. Oh those burritos!!! Yum!! They look so great! I could definitely eat breakfast any time of the day. In fact, breakfast for all meals would be ideal for me. The lasagna looks so incredible, I'm definitely impressed by your skills there. Love all of the greens you crammed in there ;)

    1. We've been fluctuating a lot; it will be 25 degrees followed by 60. . .within 12 hours or less. Ridiculous!

      I love breakfast, too! These burritos were tasty, but still in need of a little tweaking! It's all about greens - I'm thinking about adding mushrooms next time.
