Productive & Snacky

Started the morning with a grapefruit half:
 A little later: apparently spelt bread burns quickly in the toaster too.
 It looks worse than it was, but I moved my scramble on top for more of an open-faced sandwich effect.

Braving the snow for laundry detergent, and rewarded myself with a tall:
 Sauteed collard greens and a (huge) baked yam:
Hot tea and a little popcorn after cleaning at the studio.
Academic Calendar filled for the next six weeks.

Mixed greens with dried cranberries, walnuts, and Annie's Balsamic.  Potato Leek Soup.
I did a little cooking for the week, some of which you'll see in the next post.  I'm also set up for workouts:

Sunday: Rest
Monday: Align & Flow Yoga
Tuesday: HIIT Ride
Wednesday: Ride TRX
Thursday: Gentle Vinyasa
Friday: Rest
Saturday: YogaCycle

It looks like the same schedule, but I actually haven't had it for three weeks! I took four classes the week before Christmas, and then the studio slashed the number of classes it was offering during the last two weeks (to allow staff to have time off, and because many regulars would be out of town).  Over that time, I've taken five classes total! So this week will feel like a lot of work.  ;)

    1. The yam was baked in a little maple syrup and cinnamon. I'm still learning to like them! Happy New Year, Blessed Mama!

  2. Oooh lots of great stuff going on in this post! Hooray for productivity! It feels good, doesn't it? It may be annoying during the process but the feeling of accomplishment is always great :)

    Great looking meals as always! I'm impressed that you ate the toast, I prob would have wasted it like jerk and thrown it out lol. Good call putting the scramble on top though, yum. I'm so jealous of your latte... I miss coffee already even though I rarely drink it anymore. The collards and yam look simple and tasty and I really want to try that soup eventually, once I'm done with the challenge! I have a feeling I'm going to be eating lots of soup after this, ha!

    1. Selfishly, I do like down time - even though productivity is good. ;) I have time get back in the groove, as I've been relaxing a lot over break, and this semester is going to be nuts.

      I don't mind a little well done, but the picture does make it look worse. Ha! I had the same salad for dinner, and a big mug of tomato - it was the last! So, you'll be getting a break from the soup envy for a little while!

      Tonight's yoga and chat with the instructor was really inspiring, it was a great way to start the week. Tomorrow's 45 minute interval ride hopefully won't kill me - my last few classes have been 30 minutes ride, and 30 minutes something else. I might be crying. ;)

  3. The Soup & Salad is like something from a restaurant. What a perfect food day. Burnt toast is fine with me.

    1. Thank you - I tend to not focus on the presentation during my "non-blogging" nights. ;) The same salad was served tonight in a small mixing bowl, and the soup (tomato coconut curry) was in a mug. Ha!

  4. I'm jealous of your grapefruit! All the organic ones here are nasty looking and I've been wanting some.

    I'm impressed that you still ate the toast. I have a really hard time choking anything that's burnt down. I can imagine that putting scramble on top helped quite a bit, though.

    1. The grapefruits have been decent thus far! I'm about to head back towards oranges, as the craving is definitely there. It's hard to get cold fruit in on days like these!

      I think if it was any more burnt, I would have tossed it! Ha ha!

    1. All of the workouts you see listed above are at said yoga/cycle studio, and I work two shifts a week for free membership! I've been work/trading for them since September! Otherwise, I'd still be sitting on my couch. Ha!

  6. Your toaster is serious! Not sure i could have eaten it.... All errands should be rewarded with soy lattes :) lunch looks so colorful and super healthy, and that soup and salad is a great winter meal.
    Ambitious workout schedule for this week! All the ny resolutioners are in my gym lately and clogging the class signups.... Augh.

    1. Ha ha! It's an old toaster, but I think the fact that it was spelt bread might have made the difference. Noted! It's especially rewarding when the soy latte is bought with a gift card from Christmas. ;)

      Ha ha! Yes, we've seen that, too! But it has been busy since Black Friday when the owner put out a killer Groupon: $35 for 10 classes (normally $100)!
