  1. If you work out how we can do that, I'm all in - do we just use our vegan special powers or something? Until then, that oatbran looks really appealing. Blueberries make everything amazing!

  2. Ugh yes!!! It's only my second work day of the week and it hasn't even started yet! I feel like it's never going to end! wah!

    OK enough of my wining lol. That oat bran looks delicious! I love the addition of the blueberries, yum!! Lunch looks great and that roasted buddha bowl looks perfect! I love roasted chickpeas and broccoli :) Beautiful meals.

    Hang in there! You are almost over the hump :) Are you counting the days until your next break? ;)

    1. I'm almost there - just one more (long) day!!

      The Buddha Bowl is great, but I've had two out of the three servings, and I'm ready to move on. Ha ha! Cabbage, Buddha Bowl, Kale & Potato, Repeat. . . .I'd be happy to not see any of them for a while!

    1. I first heard about Old Bay from the Happy Herbivore; as a Westerner, it was new territory for me! It's just a way to sneak in a little kick on the cukes. ;) I was recently inspired by Angela's end of year posts, reminding me about the Buddha Bowl - it's great stuff!
