Back to Class

Yesterday was a teacher work day, and today the minions cherubs returned.  Thus, tonight is a quick and succinct post (in need of sleep soon!).
PB & Banana Oatmeal

On Sunday, I made Cauliflower Au Gratin - but added carrots and used panko breadcrumbs instead of whole wheat.
 Into lunch it went, as well as mixed greens with spicy garlic hummus.
Afternoon snack: remaining half cup of Potato Leek Soup.

HIIT Ride Class

Two part dinner:
Side plate salad, Cuban Black Beans, and cornbread

  1. What a great food day!!! I'm so jealous of that oatmeal, I could have used a hot breakfast on the freezing cold horrible day ;) The cauliflower au gratin looks awesome! Yum! Cauliflower is so underrated, it's one of my fav foods. Beautiful salads and the black beans and cornbread sounds like such a great combo.

    Awesome job keeping up with your workouts!!

    1. Although, I need to stock up on more oatmeal toppings because it is getting a little boring! I recall your coconut and walnut recommendations, so I'll have to get on that! Expect a lot of cruciferous veggies, with them being in season and all - and this dish was no exception, delicious!

  3. Was school cancelled at all because of the weather or was it not that bad by you?

    PB & banana oatmeal is a great idea. I've got to get all over that! All around good eats. Lots of veggies!

    1. I'm trying to jazz up my oatmeal, and this was just the starting point! Hopefully more deliciousness to come!

      No, it has been in the 30s and 40s all week - but there's still hope that this year we earn a snow day! Ha ha!

  4. Cauliflower can do no wrong in my eyes, especially if it's got a fearsomely think sauce on it. I love that the au gratin made it into two very different meals - very cool!
