Break Update #3

This last Break Update has a few odds and ends in it. I can't believe the week is nearly over! I've been avoiding my work to-do list, and have instead decorated my house and my parents' house for Christmas. I'll face reality tomorrow (notice the continued procrastination).

The Tofutti Herbs and Chives flavor verdict:
 Subtle. I also used it in my tofu scrambles twice this week. I won't go out of my way to buy, but it was okay for a change. Also, the Sugar Cookie tea from Celestial Seasonings is delicious - I'd buy it year round.

I've been thinking about Nikki's Miso Tahini Magic Sauce for a long time. I finally got around to making it. I haven't had it on a meal - was thinking it would be good on greens and potatoes for work lunches.  I did sample it by itself and was pleased.
 On Wednesday, I forked over $6 for a green juice - a preemptive strike against the gluttony that was Thursday.
I'm on a budget (I want to bake for friends and buy thoughtful gifts for family members)  in December, so one last trip to Native Foods for a while: the current favorite Indo Noodle Salad.

Break Update #2 (Thankful)

I had a few more pictures to show you, but they will wait until Saturday! It's late and I wanted to share these three with you before tucking in for the night.

Our Thanksgiving was thankfully quiet: parents, brother, myself, and the two canines. (Christmas will be huge, but everyone is coming to Colorado this year - so I'll be able to escape back to my house and my own bed!)  I prepared the snack tray while we worked on a mid-afternoon meal:

My veganized plate of mostly carbohydrates (clockwise from the top): cornbread stuffing, sweet potato mash with pecans, green beans, Tofutti creamed spinach and fried onions, brown sugar glazed carrots, mashed potatoes. 

Remy spent most of the day hanging out with Terra, my parents' 13 year old Sheba Inu.  When not guarding any dropped  food during kitchen prep, she could be found attempting to sunbathe.
I am so thankful to have you to interact with here in this medium.  Writing these "day in the life stories" through events and pictures has helped me reflect positively on life, and I am so grateful to be able to continue sharing my journey.

Break Update #1

Installment 1 of 3 (subsequent updates will occur on Thursday and Saturday).

Mainly cleaning, working out, and reading have happened:
 The weekend prior to last, whilst toasting my newly engaged friend, another recommended this series pictured above. Slightly The Hunger Games and slightly The Giver, but a quick and entertaining read thus far. I finished Divergent yesterday, and am now a ways into Insurgent.

I've "seen" two friends: the first I met for lunch at Pho-natic
I ordered the Tofu Pho with Vegetable Broth, but sadly the broth had little flavor. I haven't been in for awhile, and it appears their recipe has changed. The friend I came with said her beef broth tasted the same as always, but agreed that mine was bland.

The other friend I caught up with via Skype, as she is living in France. I was drinking coffee this morning, while she was preparing dinner! It's amazing how technology has connected us! 

Prior to the Skype date, I ran out to Whole Foods for breakfast:
 Vegan Breakfast Burrito, and sipped later throughout the day:
 This afternoon I ran into Sprouts, and along with a few pieces of produce, picked up two new items:
Sugar Cookie Tea?! Herbs and Chives Tofutti?! I had to buy them. Reviews to follow!

Ride HIIT and Yin Yoga in a little bit.

I am thoroughly enjoying this break, and Remy loves it, too - even though I cut into his regularly scheduled naps. ;)

Bring on the Break

Confessions: I ate grilled Daiya sandwiches everyday but Thursday last week. I only went to two workout classes. I didn't mention that I probably have a sinus infection, and it's symptoms are affected by barometric pressure and exhaustion (still avoiding an actual doctor appointment). The day of my last post, I went to bed at 7:30pm. My sinus cavities still feel tender but my head is no longer throbbing. I say all of this so you don't scold me for working out seven times this week.  The following week, I'm going to do four.

Also, it's really cold outside.
 Another confession: I went to Native Foods Cafe again, enticing a friend with the Reuben sandwich. She loved it, and I tried something new:
 Southwest Chipotle Chop: "Grilled Native Chicken in our smoky poblano BBQ sauce atop crisp romaine, 
roasted peppers, black beans, grilled corn and a chipotle vinaigrette. Topped with tortilla crisps, pumpkin seeds, cilantro, ranch drizzle and a fresh lime squeeze. 9.95"  Delicious.

I tried to make my own restaurant quality breakfast: tofu scramble with spinach, Tofutti, and spices, grits, toast, and Earl Grey Tea.

I fully recognize that there is a lot of cardio, but I've scheduled next week to be half yoga. And if I didn't mention it, I have the week off - so why not? ;)

In a Bowl

In a hurry (the snow arrived, really slick roads this morning) to get out the door for a longer commute, and I didn't have time to eat breakfast. Luckily, the staff room had stashed plain instant oatmeal and peanut butter.
 Cornbread and Beefless Beef Stew for lunch:
 My cute pink ceramic tumbler broke, so I bought a new one over the weekend. I've enjoyed both coffee and tea in it.
 Spaghetti with Nate's Meatless Meatballs for dinner.
No green today, for some reason when it snows that seems to happen. Hmm. . .

Old & New & Rest

All day today I thought it was Wednesday. I can tell that this is the week before Thanksgiving Break (we're off all next week)! 

Over the weekend, I gave into my cold cereal craving by picking up a box of cereal. However, the cereal name indicated an identity crisis:

 Pumpkin Curry with steamed cauliflower and peas over brown rice for lunch:
Dinner: Grilled Daiya Sandwich (a visual for those curious as to the slice appearance)
 Salad with carrot and a balsamic based dressing (still working out the kinks - will share when perfected)
 Remaining half of a mini chocolate bar:

No Yin Yoga tonight as I'm still feeling sore from the deep tissue massage.  I will definitely be in attendance tomorrow night at RideTRX class.

Current Events

Friday evening, champagne in celebration of a friend's engagement (that's not the real ring, it's being re-sized)
 Also Saturday: A rough, but necessary deep tissue massage on my right shoulder and arm.  I've been having "growing pains" from increased yoga and my muscles were pretty upset with me. I have light bruising on my upper arm but the pain is gone. (Similarly, over the summer I had to have my calves worked on due to increased cycling.)

Fruits of Labor

I've been enjoying my hard work from Tuesday quite a bit over the last two days. I plan to rotate in other meals, so as to stretch them out and also not get sick of them!

It was also accompanied by cornbread.

The question now is: what else will she make? I need to use up the rest of the canned pumpkin. Mini vegan pumpkin pie?!?! Hmm. . .

In the Kitchen: Sauce, Stew & Bread

Today's sauces are from the Everyday Happy Herbivore Cookbook, and the stew is from Skinny Bitch
First up: Miso Gravy (I doubled the recipe)
 Clockwise from the top: soy sauce and hot sauce, water, cornstarch, miso paste, nooch, black pepper in the middle.  Below: the final product (yield: 1 cup, 4 servings at 48 calories each!)
Pumpkin Curry
 Canned pumpkin, veggie broth, cumin, curry powder, cayenne (because I don't have paprika), and ginger.
 
Cornbread:
I love this mix, and sub in Ener-G for the egg and Maple Syrup for honey when preparing it.
Red Wine "Beef Stew" (I used Gardein Beefless Tips)
 Added to the tips: potato, onion, carrot, garlic, mushroom, peas (not shown: veggie broth).

Veteran's Day

Remy and I would like to extend our appreciation and gratitude to all those who have and are serving in the military, and their families!

Align & Flow Yoga: Handstands. The last time I tried one was probably 1993. "Hilarious" would be an appropriate description of my attempts. 

As you can tell, I didn't make it to my cooking itinerary.  I will have time tomorrow to make the stew, and also the cornbread! I will share those updates soon!

Treats & Action

Yes, this is my third visit in two weeks.
In my recovery from the week, I have slowly been restoring my house into working order. The kitchen is definitely still in bad shape (read: a bazillion dishes needing attention - I'm out of clean forks, for one).  Thus, I picked up lunch today: the Indo Noodle Salad.
"Cucumbers, red peppers, onions, carrots, baby greens and rice noodles tossed with a
sweet peanut-chile dressing and topped with ginger-glazed Native Tempeh, peanuts and
green onion. 9.95"

You had me at "sweet peanut chile dressing".  Of which I dumped all over this salad.  Above is prior to being evenly distributed. Below is a better look.
So, so good. 

I also picked up a slice of their pumpkin pie:
That would be ginger creme in the small container. I tried a bite, and it seems flavorful.

This week - 
Action in the kitchen: Skinng Bitch Stew, Steamed Kale with Miso Gravy and Cornbread, Pumpkin Curry.
