A Look Inside & Ahead

All of this talk about a pantry clean out, and I thought: why not just show you?  So here you go:
 Far left (and hard to see) are baking staples of Ener-G Egg Replacer, brown sugar and whole wheat flour.  They are staying, no "cleaning out" here. Lots of small bags: sushi rice, energy bites (didn't even know they were there), dried pineapple, oat bran. Mori-Nu Tofu, quinoa, wild rice,grits, rice noodles, pancake & waffle mix. Various nut butter packets.
Pasta, oats, lentils, brown rice, more quinoa, dried apricots, pb, coconut milk.

The freezer:
Okay, I wasn't supposed to do this, but I purchased the Gardein yesterday at Target! $3.29 a piece! The Dr. Praeger's have been there a while, as have the frozen veggies.
Frozen bananas in the back, blueberries, mangoes, pineapple, and strawberries.

Since we're here: the fridge (it's normally not this empty nor this clean - you're welcome.)
 Tahini and miso in the back, avocados, tomato, garlic hummus, Smart Balance.  In the drawer: pine nuts, coconut flakes, shallot.
 Spinach, green chiles, potatoes, onion.
A lot of stuff.

When I was taking stock of all this, I realized I had everything to make guacamole.  
 And then I realized, I would need a few things from the grocery store:
Here's the lunch / dinner menu for the week:  Kinda Chipotle Bowls (quinoa, spinach, corn, guacamole), Collards & Onion Saute with Roasted Potatoes, Spaghetti & Gardein Meatballs with Broccoli, Mini Crustless Tofu Quiches (but with chiles, shallots, and different seasonings).

My work/trade membership has begun, thus now I am taking all the classes I want!

The Clean Out Continues

Onion roll, leftover Tomato Basil Soup, Asian Chopped Salad

Today's Lunch:
Asian Chopped Salad and a Qrunch Quinoa Burger.

Dinner yesterday:
Avocado Pasta

Spinach and onion saute, potato wedges.

I'm ready for the weekend.  Ready for sleep and getting things accomplished around the house! One more day, my friends. . .

Pantry & Fridge Clean Out

In continuance with the theme of seasonal change, I want to work through the rest of my fridge and pantry to clear out the old and bring in the new! I'll buy a little more produce this weekend, but otherwise I'll stick to working through what's already in the house.  I plan on documenting as much as possible, starting with today!

 Peanut butter and rice cake (also: coffee at work)
Rice pilaf, leftover collards and onions
Angela's Avocado Pasta Get ready for more avocados, I have three more (purchased a week and a half ago!) to eat and leftover sauce from tonight.

I also have plenty of frozen fruit that I should put to good use - most likely in smoothies - before the weather turns!

Seasons & Things Change

Friday evening, I sliced into the Cinnamon Apple tart:
Really sugary and rich, hard to believe there's no butter in there.

Saturday morning, I awoke feeling a little off and a little tried of my ways: spending more money than I should, not being prepared for the work week, and *gasp* nearly feeling bored of my workouts.  It was clear to me that a change was in order.

Tofu scramble: spinach, tomato, nooch, seasonings.  Grits with Earth Balance.

Unfortunately, I didn't have time to really focus on how to make those changes yesterday.  I went through the motions, was overly busy, and it left me feeling grumpy.  This morning I went to a YogaCycle class with an instructor I really enjoy.  She wanted our focus to be on the positive side of change, embracing it and letting it happen naturally - she meant it to be for the season, but it obviously spoke to me on a personal level.

(Still spending money! Ack!) Whole Foods: Asian Cabbage Salad, Tomato Basil Soup, Ciabatta 

And perhaps she's right - things will fall into place.  I completed my first work/trade shift for the exercise studio this afternoon, which will allow me to save money.  I am determined to be prepped for the work week, so I am making time to cook ahead and write lessons tonight.  I am going to a different workout class tomorrow night, and my usual Wednesday night TRX class is full - causing me to try something else.  I don't have to have all the answers, I just have to be open to change - and let it happen.

A Filling Thursday

Rice, black beans, green chile, and tortilla (not shown) from Whole Foods Hot Bar.

Gentle Vinyasa this afternoon: lots of stretching and a few new poses/ breathing techniques.

Full. Must digest. Sending all blood and brain power to tummy. . .

If It Aint' Broke. . .

 My breakfast picture was blurry (So Delicious yogurt with maple granola) but my Starbucks (soy latte) was not:
Lunch: the last of the Mock Tuna from last week, tomatoes, spinach on Rustic Italian.  Beet Brownie bite.
 Cheesy Kale Chips (store bought) in the afternoon:
 An early dinner of collards and onions, cooked in veggie broth and heavily seasoned with Old Bay.  Dry roasted cauliflower. Cashew cream.
As mentioned in Sunday's post, I went to a spin and yoga combo class tonight - and that is not my usual class because of two reasons: it starts really late (also, it's 75 minutes), and is taught by my least favorite instructor.  Tonight, there was a sub - a gal whose workout and personality I really enjoy.  As much as I appreciated the full body workout, by the time I got home and showered - it was almost 9:30.  And now I have a second wind, when I should be going to bed.  Note to self:  stick with the classes close to 5:00pm, like you usually do.

Treats & Workouts

A visit to the Vegan Van (and waiting in a light rain - that's commitment! Ha!) yielded the Planet Rock with a side of spicy popcorn.  I split the sandwich in half and enjoyed it over two meals.
A visit to Beet Box produced their Beet Brownie (it has a reddish hue in person), and. . .
 Cinnamon Apple & Coconut Cashew Cream Tart.
 Don't worry, I won't eat any of these things without you!  ;)

I cut the brownie into four chunks, setting aside three for relishing in front of my meat-eating co-workers.  Here's this afternoon's chunk (the red really comes through in this photo!)
 It was moist and tasty, very light on chocolate flavor - but maybe that was the point, being a beet based brownie and all?

Luckily, I have a plan to work off the treats:

The Cool Down

This week has been a blessing in terms of temperatures; we've been in the upper 60s and low 70s all week - and our building has almost cooled down.  It's still above 80, but at least there is a cool breeze coming in through all the windows.  The amount of rain in Denver proper has been manageable, but perhaps you've heard - cities near Boulder, and in areas with poor drainage have been flooded, causing a lot of damage and calling for evacuation.  If you're interested in extreme weather, definitely click the link in bold.

Pre-yoga snack:
Sweet Korma bowl with tofu and sauteed vegetables, chili lime sauce.  I still have a third left, so that will be my lunch for tomorrow.

Gentle Vinyasa was so good today - perfect with the weather, perfect calming activity for my work week, and it was like one big cool down routine after yesterday's ride and TRX class.  There was a lot attention given to the quads, hamstrings, and hips.

A Short Weekend

How is it already over?! I want one more weekend day, please.  It's amazing how my days fill up, and it's already time to do "homework" (write lessons).  Before that happens, here's a few things from my weekend: I had a long, leisurely lunch this afternoon with a friend at WaterCourse Foods.  In case you didn't know you were there, even the graffiti in the bathroom says "let's all get along, world peace" and "go vegan".  ;)
I had the Dona Lee, with double greens as a side and their lovely balsamic dressing.  I still have one wrap left that I'll enjoy for dinner.

Yesterday, I went to the Farmer's Market but didn't have any ideas about what to make this week - so I left with a light canvas bag, only filled with organic peaches (yes, the expensive ones) and tomatoes.
Not in the canvas bag, but also purchased: iced coffee from a local vendor.

I'm cutting back a day of workouts this week, as I did six last week:
Sunday: YogaCycle (completed, and she really handed it to us - super sweaty, already sore)
Monday: Rest
Tuesday: Rest
Wednesday: Ride TRX (my beloved YogaCycle class was removed from the schedule, so I'll be workout with the owner and pushing myself in another attempt at TRX after a spin class).
Thursday: Gentle Vinyasa (my "I'm sorry, body" stretching session after Wednesday's class)
Friday: Rest
Saturday: YogaCycle

Roll With It

I don't care about football, so I didn't realize a) the season opener is tonight and b) the whole world revolves around football.  Thus, I was a little surprised to learn that my school decided (two days ago) to move Back to School Night from this evening to next week - because of the Bronco game.  I celebrated this free evening with a last minute Gentle Vinyasa class, yes - that takes me to six days of activity this week - but it really is mostly about stretching and a little toning.  The instructor is so amazing; all of her poses are beautiful and appear effortless.

To take our mind off the boiling heat in the building, we were handed a box of Lemonade Popsicles in the afternoon - I enjoyed one.

Dinner: spicy sauteed collards (I was a little heavy handed with the hot sauce), oven roasted potato and golden beet slices, served with cashew cream.

Quick Tuesday

This morning my option was to a) wake up on time and make a smoothie, or b) sleep in and take a Larabar.  Here's the outcome:

Another week of the same lunch:
Happy Herbivore's Mock Tuna with spinach, on Sunflower Whole Wheat.

Blueberries and cocoa almonds for a snack.

Farmer's Market collards (cooked in veggie broth, with shallots, nooch and hot sauce), served with a dallop of homemade cashew cream and corn on the cob.

Prior to dinner, I went to a Ride Interval class with a new-to-me instructor.  She is a track/cycling coach, and this weekend will be doing an Ironman (in Madison, WI)  - 112 miles on the bike.  She took us through speedwork and hills, and ended with class with a sample of her course.  My legs are already sore!

On the temperature front, we hit 90 degrees in my classroom - thus bad, but not horrific.  Or maybe my idea of "horrific" and "bad" are skewed.  ;)  See you Thursday!
