Spring Break Highlights #3

As mentioned in Thursday's post (a.k.a the LoDo tour / Reuben sandwich edition), this is my last installment of Spring Break highlights.  I know we still have Sunday, but between Easter and having to actually write lessons - it's more like a return to work.  It's been a welcome vacation from everyday life, and I'm glad I was able to re-charge.

I only have two food photos for you: first, a trip to Sweet Action for Vegan Cinnamon Ice Cream.
Second: a Vietnamese Tofu Salad from Whole Foods. Dressed in peanut sauce.
Friday, my mother took the day off and we went into the foothills for a gorgeous hike. Remy and my parent's dog also came along.  We started in Morrison, and drove (the scenic route) towards Evergreen.

From there, we backtracked a couple of miles and headed towards our hiking destination: Mount Falcon. (Colorado FYI: Foothills are baby mountains meant for hiking.  Mountains are skied or climbed.)
Two miles down and back.
The clouds were in full cooperation for photos.
There are several trails, and I hope to try different ones in the future.

The mile back was mostly uphill (there are three hills to walk over, but this first one. . .holy cow).
Nature's stairmaster.  I'll take it over the gym any day.

Spring Break Highlights #2

Reading material:
(I'm re-reading this title as I'll be teaching it in the next unit)

A few items ingested over yesterday and today:

My first Reuben sandwich!
(I visited SubCulture for the first time, and ordered the Veggie Reuben. I asked them to make the necessary substitutions for a vegan version. It was messy, warm, and pretty good.  But I love veggie sandwiches- and they have so many kinds! - that I'll be back to try other sandwiches in the future.)

Remy had two walks today, and for the second one we walked around LoDo (Lower Downtown).

For Molly:
As a reminder: five days ago, I was snowed in.  Colorado is known for having 300+ days of sunshine a year, and as you can see - the sun has melted it all.

Spring Break Highlights #1

The best breakfast burrito ever.  I took half home and enjoyed it for lunch.

Did I mention it was amazing?
The Very Vegan personal size pizza from Pizza Fusion.
It's a good thing I'm back to daily workouts, because I've had some decadent meals!  See you Thursday for Spring Break's next round of highlights.

Spring Break Sunday

Breakfast toast was heavy on the 'naner.

It took me about 15 minutes to dig out, but when I did - I made two stops, one of which was Whole Foods.  I picked up a new flavor of freshly squeezed? pulverized? pressed? juice:
So amazingly delicious. If you have a juicer, please try it!
Also, I picked up lunch:
 

I was really quite impressed with them today.  Very good.
More snow in the later afternoon. *sigh*
Leftovers from last night. More yumminess.
I am pretty excited about not going to work tomorrow.  My plans for this week include my usual number of posts, but they'll be filled with more pictures. Hopefully, I will do /go to exciting or interesting things, and not have to show you how I cleaned out my linen closet and filed my taxes.

Snowed In

As you may or may not know, a large snow storm landed in Colorado and Kansas today, and will be reaching the Mid-Atlantic states and southern New England by Monday (maybe a day off work for Shen, Sarah, and Maud?)
(Seven inches, and more expected tomorrow night).
I AM ON SPRING BREAK. WHERE IS SPRING?!?!

Okay, I have calmed down.  We need the moisture, after all.  Snow makes me crave waffles or pancakes, so I made pancakes.  Shortly after this photo was taken, they met up with maple syrup.
I stayed inside, cleaning and doing laundry, followed by brief shoveling stints.  The wind was really horrible, so it made everything a little more. . .adventurous.  Creamy Avocado Pasta for lunch.

Another Oh She Glows recipe, Roasted Buddha Bowl, for dinner.
At least I'm snowed in with the cutest canine in the world.

Updated Hot Bar #3

Also known as the "Whole Foods" Hot Bar epic fail.  I don't know what was up with this location tonight, but they were quite skimpy on the vegan hot eats.

Now, this is impressive and new to me:
Hummus Bar (top row: beet hummus, roasted garlic hummus, roasted bell pepper. Bottom row: traditional, green garbanzo bean, and edamame hummus).  Next to this was a mini salad and pita bar.
Sam's Vegan Chili with Cornbread. To the back left (on the other side) was a red curry tofu, but they listed shellfish as an ingredient. Why?!

Since the Hot Bar offerings were limited, I decided to snap a few other pictures.  First, the aforementioned vegan donuts. 
Vegan Chocolate Glazed Donut, Vegan Vanilla Glazed Donut, and the label you can't see but the donuts on the far right are Vegan French Toast flavor. Fancy! I'll try one eventually and share my thoughts.

Second, the Hail Merry line appears to still be on sale. To the right are the Simply Dara Raw Balls I tried as a sample.  Holy cow, they need to go on sale.  So good.
Not photographed, due to the 6:30pm dinner rush crowd, was the Vegetable Barley Soup and Vegan Pizza.

One more work day till Spring Break. Hallelujah!
