Keep it Simple

A busy week lends itself to simple meals - or at least repeat meals.  Second time this week:
Third time this week, and I'm a little over it:
Wild rice (why is it that color? Weird) with broccoli, peas, carrots, and onions.

A first for the week: kale avocado salad and potato wedges:

Visions of a Weekend

Fluffy pancake for one, maple syrup. (It's all about the baking soda.)

Our four inches of snow from Wednesday / Thursday were nearly all melted, allowing this soy latte to be photographed outside.
The best birthday surprise package ever:
Sarah blessed me with almond oatmeal cookies (so good, I've already had four), a beautiful mug and birthday card!  So sweet!

Overnight Saturday into Sunday, it began -and in the morning looked like this:
It recently stopped, and I measured 8 inches in the backyard.  Can't wait to try to go to work in the morning!
Thus, warm meals were had - avocado pasta (although it doesn't look particularly green),
Chapati (unleavened Indian flatbread), garlic hummus, saag, and homemade yellow curry.  

I love the weekend.

Soup-er Thursday

A Bit of Color

First, a photo I meant to post yesterday: 
Stained glass window inside an engineering building on the Colorado School of Mines campus.  I was there very briefly yesterday, and appreciated this four story window in the entry.

Breakfast today: Grape Nuts with almond milk
Taken to work for lunch: carrot ginger soup, unsalted saltines, apple.
When I arrived home from work, I had an early dinner appetizer in the form of a mixed green salad with walnuts and pomegranate dressing.
Nice pants and slipper in the background (yes, I wear slippers or socks around the house - leave your shoes at the door).  Ha!

Dinner:  Avocado pasta using angel hair.

Lookin' Good

Quick cardio at the gym, followed by baked oatmeal and a grapefruit half.  And morning sunshine.
Out and about, and in need of some goodness: carrot-apple-ginger from Parsley.
Late lunch: rosemary garlic roasted potatoes (Whole Foods) and greens (drizzled with balsamic vinegar post photo).
Seasoned kale chips from the dehydrator as a snack:
Currently finishing up the cooking process of Carrot Ginger Soup.  I'll probably have a small bowl before squirreling it away for lunches this week.
Thank you Congress for approving President's Day (err. . .George Washington's birthday) as a national holiday.  I would like to formally request that all weekends be three days long.

Not Exactly Healthy

It appears that I still party eat like it's my birthday, as I have been dining out and indulging a little too much.  Tomorrow will be much cleaner and greener! Oh, and there will be exercise, too. ;)

A little shopping with a friend, followed by lunch at Red Robin.  I took Shen's advice and ordered the Boca Vegan Burger.

Another Year

I have been gifted with another year of life.  As it happened in the middle of the week this year, I have been sprinkling the surrounding days with indulgences (i.e. friends, massage, wine).  Last night a friend took me out to dinner at Potager (not super vegan friendly, but their special - vegetable samosas were easily made vegan).   It's a classy place, so they discreetly celebrated my birthday with this impressive sight:
I know it's just a lit wax candle, but I thought it was beautiful and simple.
Unlike last year, I worked today and didn't make my own dessert.  I went to Happy Cakes and picked up cupcakes for myself, my parents, and my brother.  
They only had one vegan option - chocolate with chocolate frosting.  I'm not a huge cake eater, and when I do indulge, I'd pick vanilla.  I'll check back another time and see if I can fulfill my true desire. ;)
Top left in tissue paper was mine, the others were non-vegan and for the rest of the family members.
It was good.

Massage it Out Monday

When cold cereal is on sale for less than $2 a box, you buy it.  Quaker Oatmeal Squares with almond milk.
Yesterday I made chili in the crockpot - so another serving joined me for lunch:
Kidney beans, yellow bell pepper, onion, tomatoes, chili powder.
Some unsalted saltines on the side:
A small ramekin of pistachios before heading out for a massage.
Relaxed and hungry: broccoli and spaghetti for dinner.
A healthy amount of veggies today, but missing my leafy greens.  They are on the agenda for tomorrow!

Updated Hot Bar #2

Today I visited Whole Foods location #2 to scope out the offerings available at the Hot Bar.  Last time you went with me, it was May and their food was Cinco de Mayo themed.  Today's theme was all about Mardi Gras.
Front:  Cajun Red Beans, Back: Cajun Roasted Red Potatoes

Front:  "Chef Prepared Vegetarian" Mardi Gras Blackened Tofu.  I didn't see any dairy in the ingredient list, so it's probably vegan - nonetheless, I didn't try it.  Ha!  That's corn in the back but it was made with milk.

Left:  Vegan "Dirty Rice" and Right: Steamed, Seasoned Veggies.

Non-Mardi Gras themed items:

Asian Couscous Salad.

I've seen these several times, but have never tried them.  It's nice they offer Garden Nuggets for the kids, and not just animal stuff.  
It would seem that Bhakti Chai now sells their goods in quarts and growler-sized quantities.  Does this mean they will start filling shelves in other regions?

Hello, Saturday!

Sometimes, it's a waffle kind of morning.
A trip to the chiropractor.  Followed by a soy latte while catching up with my aunt.
When we finished it was past lunch time, and I stopped by Whole Foods.  Which reminds me, I owe you another "Whole Foods Hot Bar" edition.  Will do that tomorrow.
Spicy potato wedges, mixed greens (collards, kale, and I don't know), steamed veggies.

My photo from this evening didn't turn out clearly, so here is a repeat - but it looked quite similar.  Miso soup:
