Fruits of Labor

I've been enjoying my hard work from Tuesday quite a bit over the last two days. I plan to rotate in other meals, so as to stretch them out and also not get sick of them!

Pumpkin Curry Sauce with Steamed Cauliflower, Peas and Brown Rice

Miso Gravy with Steamed Kale and Cornbread

Red Wine Beefless Stew (and apple)
It was also accompanied by cornbread.

The question now is: what else will she make? I need to use up the rest of the canned pumpkin. Mini vegan pumpkin pie?!?! Hmm. . .

  1. The cornbread with the kale and gravy looks like such a perfect meal. I love having stuff made already that lasts for several days. It makes such a difference throughout the work week.

    1. I think that specific meal is my favorite! I love steamed kale and miso gravy together. It does help to have it all lined up!

  2. I can't help but agree - I love bread on the side to sop up gravy! What about some pumpkin mousse for the rest of the can?

  3. The Pumpkin Curry looks restaurant quality. Your Beefless Beef Stew is still not dark enough. You sure you added the Red Wine?

    1. Not quite restaurant quality, as it's quite thick - it still needs a little thinning out in my opinion. Yes, there is wine! I think I added too much water when I was making the veggie broth (I used cubes, as I ran out of pre-made stock), but this is under fluorescent lighting - so everything looks wrong. :/

  5. fantastic looking food. The cornbread looks great! I don't own a steamer, which is frustrating, but I want to make that kale + gravy dish!

    1. I use a bamboo basket that I bought at an international market a few years ago, and it is the best! I don't think it was much, but I don't really remember. Definitely get your hands on one, or even a small metal insert for a sauce pan would be life changing! Do you have Everyday Happy Herbivore? If not, let me know and I'll send you the recipe for the gravy.

  6. Oooh everything looks amazing! Definitely looks like all of that hard work paid off, so many great meals at your fingertips. I'm jealous of everything but oh man that cornbread is calling my name! And a mini pumpkin pie sounds soooooo good right about now ;)

    1. Time for some cornbread in Sarah's kitchen! It's awesome. I was definitely think you'd understand my desire for a mini pie - as a whole pie would be too much! I haven't done anything yet, but I'm about to do it. . .

  7. Your day cooking has really paid off! Everything sounds so good-the pumpkin curry especially.... And i also vote for pumpkin pie, but some pumpkin bread would be lovely.

    1. Hi! Still taking spin classes? I'm still doing three or so a week, but right now my right palm is sore from all the leaning on the handle bars. Oops! But back to you comment, pumpkin bread is a great idea! I hadn't even thought of that!
