Another week of the same lunch:
Happy Herbivore's Mock Tuna with spinach, on Sunflower Whole Wheat.
Blueberries and cocoa almonds for a snack.
Farmer's Market collards (cooked in veggie broth, with shallots, nooch and hot sauce), served with a dallop of homemade cashew cream and corn on the cob.
Prior to dinner, I went to a Ride Interval class with a new-to-me instructor. She is a track/cycling coach, and this weekend will be doing an Ironman (in Madison, WI) - 112 miles on the bike. She took us through speedwork and hills, and ended with class with a sample of her course. My legs are already sore!
On the temperature front, we hit 90 degrees in my classroom - thus bad, but not horrific. Or maybe my idea of "horrific" and "bad" are skewed. ;) See you Thursday!
