Quick Tuesday

This morning my option was to a) wake up on time and make a smoothie, or b) sleep in and take a Larabar.  Here's the outcome:

Another week of the same lunch:
Happy Herbivore's Mock Tuna with spinach, on Sunflower Whole Wheat.

Blueberries and cocoa almonds for a snack.

Dinner:
Farmer's Market collards (cooked in veggie broth, with shallots, nooch and hot sauce), served with a dallop of homemade cashew cream and corn on the cob.

Prior to dinner, I went to a Ride Interval class with a new-to-me instructor.  She is a track/cycling coach, and this weekend will be doing an Ironman (in Madison, WI)  - 112 miles on the bike.  She took us through speedwork and hills, and ended with class with a sample of her course.  My legs are already sore!

On the temperature front, we hit 90 degrees in my classroom - thus bad, but not horrific.  Or maybe my idea of "horrific" and "bad" are skewed.  ;)  See you Thursday!

    What's in your cashew sour cream (bar the obvious!) It looks gorgeous!

    1. Soaked cashews (drained), Italian Seasoning, nooch, sea salt and a little water to make the creamy consistency!

  2. I would have made the same exact choice. I wake up very early on a daily basis (unless I take Zyrtec for my allergies and can't open my eyes before 10!! WTF?!) but it usually takes me a solid hour to get my butt out of bed. This, I have grab and go breakfasts on a fairly regular basis nowadays ;)

    Lunch always looks yummy and I am definitely like you in that I will make the same thing for lunch all week. It just makes life easier! Dinner looks great! I love greens cooked simply. My fav is the sauteed chard from crazy sexy kitchen. It is easy and so delicious.

    Sounds like an intense workout!! And an Ironman omg!!! I'd love to be able to do a race like that one day but I need to stop being sick and lazy first lol! And 90 degrees sounds pretty horrific to me. I remember one day at work my boss didn't put on the AC for the first few hours we were there and it was so humid and I was so cranky because it was so gross. I don't know how you do it!

    1. I love my sleep! Ha ha! This morning wasn't any better. I need to go to sleep earlier! Allergies have been acting up here, too. I have one student (as a 10th grader, but I also had him as a 9th grader last year) who suffers from allergies until nearly Christmas! He's like a walking snot factory.

      I need to try the sauteed chard recipe; I've never loved chard, but it probably is because I've only had it raw. I will absolutely be making collard the same way again soon!

      Yeah, it's pretty horrible. I've taken to rinsing off when I get home, going to workout, and showering again! Rumor has it next week will be cooler. Keep your fingers crossed! Humidity absolutely makes it worse.

  3. I usually pick sleeping in when I have the choice, too, so I don't blame you one bit! I've never had that flavor but it sounds delicious.

    90 degrees sounds pretty awful when stuck in a classroom with a bunch of other bodies. Although, I guess being out of the sun there makes a difference. The humidity here just kills me.

    1. Sleeping in always wins! Ha ha! I've had that bar in my kitchen cabinet for a while, it was decent enough but I'm preferential to anything peanut butter.

      It's pretty gross, to be honest! I drink water all day, but feel dehydrated. Ha! We are quite fortunate to not have humidity, I can only imagine!

  5. Oh, my goodness 90 in a classroom...I'm glad that you don't see it as horrific. Does it make you want to fall asleep?! Pretty fresh veggies.
