If It Aint' Broke. . .

 My breakfast picture was blurry (So Delicious yogurt with maple granola) but my Starbucks (soy latte) was not:
Lunch: the last of the Mock Tuna from last week, tomatoes, spinach on Rustic Italian.  Beet Brownie bite.
 Cheesy Kale Chips (store bought) in the afternoon:
 An early dinner of collards and onions, cooked in veggie broth and heavily seasoned with Old Bay.  Dry roasted cauliflower. Cashew cream.
As mentioned in Sunday's post, I went to a spin and yoga combo class tonight - and that is not my usual class because of two reasons: it starts really late (also, it's 75 minutes), and is taught by my least favorite instructor.  Tonight, there was a sub - a gal whose workout and personality I really enjoy.  As much as I appreciated the full body workout, by the time I got home and showered - it was almost 9:30.  And now I have a second wind, when I should be going to bed.  Note to self:  stick with the classes close to 5:00pm, like you usually do.

    So you just boil the collards and onion? I've never thought to cook them like that.

    1. It's more like a sautee, just enough broth to cover the bottom of the pan and then adding more as needed to ensure no sticking! It's really good - I let them go for awhile and the collards were really tender.

  2. I'm impressed you managed post after all that! Still looks like a good tea- what's in the cashew cream (apart from cashews, obviously!)?

    1. It's just cashews soaked overnight, a little water for blending, sea salt and Italian Seasoning!

  4. It has been perfect soy latte weather here. It's getting crisp, exactly what I love! Sadly I have to go shopping for fall clothes which I kind of loathe, lol! Anyway, your lunch looks awesome! Especially the addition of the tomatoes, yum! I bet your coworkers were jealous of the sandwich and the brownie for sure! The kale chips look delicious too. I should make some, it has been too long. Great looking dinner too! I've been craving cauliflower like a fiend ;)

    Yikes, that is really late for a workout! I'm glad you liked the substitute instructor but I know what you mean about working out late. I refused to train late because I knew I'd never get to sleep. I always got my way too, lol! I miss it so much but hopefully soon I'll be back in action at the gym... hope you were able to get to bed at a decent hour!

    1. I am eager for the cool weather (minus the flooding of course) to return - it's been hot all week until today, we're in the 70s. I LOVE fall!! Suprisingly, no one has even blinked at my brownie! Ha ha! I did tell a co-worker about it, and she seemed curious about it. The cauliflower I purchased was huge, and so both Remy and I have been eating it quite a bit.

      I'm so glad I only signed up for the one late class - back to the earlier classes for me! Last night was great, and I'm leaving for yoga in a few minutes! So much better! I think I'm just like you - hard to sleep after a late workout.

  6. mmm! lots of delicious eats here! i love kale chips:) I saw a funny meme about soy milk the other day...it goes, what if soy milk is just regular milk introducing itself in spanish? :) haha i thought that was cute! hope you're having a great day!

  7. That's quite the kale chip! Lots going on with it. :) I give you kudos for enjoying that brownie a quarter at a time. I have no restraint when it comes to sweets.

    I would have a very hard time with such a late workout. I don't blame you for deciding to stick to earlier classes!

    1. I think it was a few stuck together! Ha! I'm not a huge dessert person, but I hope to continue this "portioning it out" habit. It's better for me and I get to enjoy it longer!
