Mellow Monday

Pineapple - banana - mango -spinach smoothie (1:1 almond milk and water for liquid) to start the day.

Late morning snack (YogaCycle class was at 1:30pm, and didn't want to eat lunch beforehand):
Flatbread (it's like three Saltines laid out side by side) and garlic hummus.

The instructor I had yesterday was subbing today's 60 minute class.  My legs felt especially tired during the spin portion, but the yoga session had a lot of leg and hip stretching components (more pigeon pose, ha ha!).  
Lunch: I prepared the "filling" before class to let the flavors marinate.
Half cup of corn, half cup of black beans, half of a tomato, two green onions, part of one jalapeno.

Avocado added at the final stage of lettuce wrap assembly:
I know it doesn't look like much.  But know that I tore up two more leaves of lettuce and added them to the remaining filling and ate it as a salad. 

Watermelon and cantelope pre-dinner.

Dinner:  Qrunch Quinoa Burger with BBQ sauce and broccoli, seasoned with Old Bay and nooch.

Due to 99 problems degrees outside, Remy and I spent most of the day indoors - relishing the air conditioning. These are the dog days of summer, right?

  1. Hahahaha 99 problems made me chuckle :) Remy is such a sweetieface. I know how it feels to not want to leave that AC. Poor little guy. I can't imagine having to wear a warm coat all the time in weather like this! That must be what it's like, right?

    That smoothie is gorgeous and I love the sound of the flatbreads! Perfect pre-workout snack. I'm the same way, I can't eat before a workout. The filling and wraps sound amazing! What a beautiful meal! How are those quinoa burgers? It looks nice and light, yum!

    Another great day! I'm so jealous of your summer. I was looking forward to summer so much and I feel like I haven't been able to enjoy it because of work and my yucky allergies. Boo. It's ok though, lucky my favorite season is on deck!

    1. I'm still trying to stay cool! Ha ha! Remy didn't last too long at the park today either. I love the quinoa burgers! I do use the oven, which as hot as it is, was still worth it. I couldn't imagine it in the microwave.

      Summer is escaping me this year; it's really flying - and I wish I could make it slow down! I love autumn, too - although I prefer your version of the season more than Colorado's version. We'll be hot until the end of September, and usually October is pretty mild too.

  2. Each degree hotter IS a problem! I feel bad for the fuzzy animals. must be so hot.
    The smoothie does sound delicious. Tropical. Have you ever added coconut water instead of plain water? The raw tacos look awesome too! I ought to pick up some romaine leaves. Collards are nice but a little tough, and lettuce has more cooling water in it.
    The yoga sounds perfect. I always have problems with my hips and am trying to remember to stretch more, and loosen up in general.

    1. I know! I shouldn't complain, our little furries really do have it worse. I totally need to try it with coconut water! That would really make it tropical. The raw tacos were great - I just need to work on filling a little more.

      I am not good about stretching, so yoga does it for me! ;)

  3. Aw, I love the picture of Remy! Dog days of summer, indeed! We're getting low 70's the last few days, so hopefully it comes your way soon.

    I'm glad you found a use for the jalapeño and it certainly is a delicious one! A great post workout meal, too.

    1. He has been much the same today! While at the park, he ran around for about 30 seconds, then was all done. Ha! Lower temps would be lovely.

      The filling was a good jumping off point, and the jalapenos definitely kicked them up a notch!

  4. Extremely perfect day. I really like the straw in the Smoothie and you found some gorgeous Avocado. Do you recommend those Qrunch Burgers? I still haven't tried them.

    1. Remy's little face makes it all the more perfect, right? ;) The straw is reusable and came in a pack from Cost Plus - you'll see more colors soon! I really like the Qrunch burgers - and if you buy them, prep them in the oven to really get the best quality. They are tied for my favorite alongside the Gardein Chick'n Patty.

  5. That sounds like the perfect summer breakfast smoothie! And the 99 problems is hysterical.
    The yoga stretching after spin is sooo good for you- you will be able to turn yourself into a bendy pretzel any day now ;) the lettuce wraps are such a great idea, i always have to smear mine with hummus to prevent the fillings from falling out.
    I saw those quinoa patties the other day, your dinner looks good!

    1. I'm not yet a bendy pretzel, but I do feel a little more limber! Hopefully soon! ;) Hummus as glue is a great idea. I will definitely have to try it.

      I would recommend the quinoa burger - it's so good!

  6. that's a pretty good day all in all, I reckon. I keep meaning to get myself going on the whole green smoothie for breakfast thing, but I'm a bit leery of sharp green veggies first thing. Do you have to get used to it, or am I just being a bit feeble?

    1. Fruit and plant milk cuts out any sharpness - and spinach is completely undetectable! I hope you try it and I hope you tell me how I can comment on your blog. ;)
