Another Summer Tuesday

First, I found out yesterday (as I drove by) that Native Foods Cafe is coming to Denver! Woo hoo!  I know there is one in Boulder (Molly has been there!), but I haven't made it up there to try it.  Now, I can visit one in 10 minutes! It seems closer to opening than Trader Joes's, as they are still framing the building (I'll get a picture of it soon).

Back to today: Vanilla Almond Milk Yogurt with blueberries and cocoa dusted almonds.  It's like dessert.
 
Zumba: today was my current favorite instructor's last class. She made this one really count, and I was fully fatigued by the end.

Afterwards, I visited Whole Foods to pick up lunch before meeting a friend.

Dinner: Kale and pineapple salad with homemade poppyseed dressing and corn on the cob.
I have been having this dressing for nearly a week but with strawberries and kale.  I liked it just as well with pineapple.

  1. Kale and pineapple! I've never heard of such a combo but it sounds interesting. Did you just steam the kale?
    How lucky for you about Native Foods. I've heard incredible things about the place.
    Nice looking breakfast, too. Haven't seen cocoa dusted almonds around here. Are they sweet at all?

    1. I figured that if strawberries and blueberries work with kale - pineapple must as well! It was a raw salad, but I did let it rest while the corn was boiling.

      I am pretty excited about having a Native Foods within reach! We have vegetarian restaurants, but other than the Vegan Van - no vegan joints.

      The cocoa dusted almonds aren't really sweet, but just a touch of chocolate flavor to make it taste so good!

  2. Wow Ingrid! What an amazing day! First of all, lucky you... Native Foods AND Trader Joe's coming into town! That's amazing, I'm definitely jealous of Native Foods :) That breakfast combination sounds divine. All of these meals are so creative! I would never think to put pineapple and kale together but it sounds delicious! A nice anti inflammatory meal as well ;) Also great that you had a good workout. Sad that it's her last day but at least she made it count! Sounds like you are making every minute of your vacation count as well. Seems like you've been enjoying it!

    1. I'm going to have to pay attention and see if they announce an opening for Native Foods! The building on the outside certainly looks ready!

      It was an awesome salad between the sweetness of the pineapple, the creamy zing of the poppyseed dressing and kale - which tasted like kale. ;)

      I am so glad tomorrow is a rest day, as I am wiped out! Today's yogacycle was a lot of work, too - I'm having to ice my knees and ankles on occasion. Ha!

      My summer break is almost over. :( Next week is my last! I'm trying to enjoy it as much as possible! I hope you are as well!

  3. Oh, yes!! You will absolutely adore Native Foods. We can't wait to visit Boulder again for the simple fact that they have one. Very exciting!

    Such a great breakfast. I had blueberries the past few days, but just mixed with other berries. Wonderful salad combo for dinner, too. I would have never thought of putting pineapple in one!

    1. It's silly that I haven't made the 45 minute drive up to try it. At that point, I guess I'll just wait. ;)

      Pineapple is a great addition to kale!

  4. I'd be willing to eat a whole plate of Kale and PIneapple Salad if only Native Foods would come here. Can't wait to see what you order there.

    Nice looking corn on the cob. We haven't gotten it here yet.

    1. It's really good, unless you don't like kale. Or pineapple. Or poppyseed dressing. ;)

      The ears are definitely on the small side, and not yet a great deal. These were part of a 5 for $2 at the Farmer's Market.

  5. That looks like my breakfast! Only mine had a double espresso and puffins too :) glad zumba was a good class, maybe the replacement instructor will be even more awesome.
    The native foods is so exciting! Although i don't think they have a salad as creative as your dinner.... Which sounds like an amazing combo.

    1. I definitely have a little more with breakfast on the days that I work! Zumba is great for torching calories and not noticing the hour pass by - I don't pay attention to my lack of "coolness" as a dancer, because I'm definitely average. Ha ha!
