Good Eats All Around

I've snapped pictures of a few meals over the last three days, and they have been quite tasty!

Fruit bowl, sunflower whole wheat with pb

Kung Pao Tofu with brown rice from Little Ollie's (ate lunch there, this is my leftovers - also good).  

Quinoa cooked in vegetable broth, corn, and pico de gallo (from the prepared section at Whole Foods). After this picture, I garnished with green onion.

 
Sunflower toast with pb and banana.
There has also been plenty of cherries enjoyed.  

Tomorrow is my last day of work before summer break. WOO HOO!

  1. Yay, so exciting about summer vacation! I can't help but be a little jealous but I'm so happy for you that you get the break! You deserve it!

    Now, lets talk about these gorgeous meals! Your fruit salad is so pretty and the sunflower bread looks really delicious and even more so with pb and banana! The Kung Pao Tofu looks delicious as well as the quinoa dish. The addition of the green onion must have added a lot of brightness and flavor, yum!

    1. I'm still not fully thinking about it being time for summer break! Most years I'm crawling the walls, exhausted, and slightly cranky. This year has been a quiet wind down, and it ended with a BBQ at my principal's house this afternoon.

      After taking a break from the PB Banana toast, the craving is in full force! Ha! I love, love fruit. So happy the good stuff is in season. :)

  2. I'm jealous that you've been enjoying cherries! I bought them once in the past few weeks and they were horrible (and haven't looked much better since).

    How exciting that you'll be on summer break! I'm also jealous of that!! lol :)

    Great looking food, especially the quinoa salad.

    1. They have been turning soft a little too fast for my liking, but they are really good so far. I probably won't buy much more, for the price alone!

      It has yet to sink in, and since I'm leaving for Texas next week - it's kind of a whirlwind until then. I imagine once I'm back in town, it'll fully register!

      The pico de gallo had some jalapenos in it, so it was quite spicy!

  4. Tofutti Dog?! I didn't know Tofutti made Hot Dogs, did I? Can't wait to hear about your trip to Texas. Great vegan grub down there.

    1. Ha! Thanks for catching that, it was a Tofurky dog but apparently I've been brainwashed by the amount of Tofutti I purchase. :)

      Re: Texas, I'll be outnumbered but I'm hoping that if I have to eat a side salad at a BBQ joint, they'll go to a veg restaurant in exchange the next meal!
