Not So Green

Nothing like a May Day snow storm to switch up the food around here. (This is from this morning - the sun was in full force all day, and took care of most of it.)
PB & J Toast

Asian Chopped Salad with mandarin oranges:
Crackers and hummus in the afternoon.

Mexican Hash and beans:
Red potato, tofu, green chile, nooch, avocado.
(Notice the lesser amount of snow in the background!)

This dinner, and tomorrow's happy hour tequila, should cover my Cinco de Mayo participation, right?

    1. Thanks, Shen! I love mandarin oranges, too. The tofu hash was a result of using up bits in the fridge - it turned out quite well!

  3. Yum!!!! Everything looks amazing! Is it weird that I NEVER eat jelly with my pb and honestly don't even remember what it tastes like? I've been wanting to give it a try just to remind myself and your toast looks so good I probably will! The salad is beautiful and those chunks of gorgeous avocado in the hash are making me hungry! ;)

    1. Oh but you should! PB&J toast is pretty phenomenal. Not too shabby of a throw together dinner, and avocado makes everything better. :)

  4. Between this and the tamales, it definitely looks like you had Cinco de Mayo covered. :)

    So crazy that places still got snow last week. When we drove through Iowa last Saturday there was quite a bit of snow. Weird weather!
