El Quinto

"The fifth" for non-Spanish speakers.  My fifth of May was full of neutral colors, not very festive-like. Ha ha!
Hold your applause - I broke down and bought a mix.  The result has vegan subs thrown in: Ener G, grapeseed oil, vanilla almond milk.  Maple syrup, black coffee.  Completely stuffed.
Pita chips, carrots, garlic hummus for lunch.
Vegan Tamales from Whole Foods.
Also from Whole Foods, the bottomless cup of overly sweet, can only have a spoonful once in a while, vegan chocolate mousse.

Back to the grind tomorrow, I hope your weekend has been enjoyable!

    1. Right?! Although, it really does have a lot to do with the mix. ;)

I feel like it's half maple syrup, so as long as its in the fridge. . .

  3. You have the gift for making Pancakes, that's for sure. Must be your Swedish heritage.

Your 5th celebration was similar to mine -- Middle Eastern for lunch and Mexican for dinner.

  4. THis looks like a perfect food day to me! Mix or no mix, those pancakes look fluffy and delicious! Pita chips and carrots are my favorite things to dip in hummus and garlic is my favorite hummus so I"m definitely loving that lunch. Still jealous of those tamales too! I would have been all over that if I had access to them. A spoonful of rich chocolate sounds like a perfectly sweet way to end a yummy day!

    1. I was surprised to find an "accidentally vegan" mix, and the taste is excellent, too! I love pita chips and carrots in hummus. Only snap peas are a close second. We need to get a tamale to you soon! I bet you'd like them.

It's really, really sweet. Borderline considering throwing it out!
