Sixty Degree Sunday

Open the windows and let it in - our first sixty degree day in weeks! It's going to snow tomorrow, but whatever.  Today was glorious, and thus all photographs were out of doors.
Toasted everything bagel half, Tofutti, Soy Latte.

Vietnamese Tofu Noodle Salad with Peanut Sauce:

Snacktime: Half of this bottle of Kombucha:
And a few spoonfuls of:

It's like chocolate frosting, so it's going to stay in the fridge for "sweet-craving-emergencies-only".

Dinner: the last spoonfuls of yesterday's hot bar (curried cauliflower with peas)
and homemade Cuban Black Beans garnished with green onion:

  1. Wow, that all looks fabulous! I especially love the looks of the tofu noodle salad. I wouldn't mind the weather being a bit chilly in my area. We have been in the mid 80's for days now.

    1. Hi BlessedMama! The mid-80's?! Yikes! Well, it's snowing right now and about 30 degrees - so my journey to nice weather is presently over. *sigh*

  2. That's great that it was such a nice weekend out! We might get that weather by next weekend. Hopefully.... wind chill was in the teens for us on Saturday.

    The noodle salad looks really good, especially considering that it has peanut sauce. :) That mousse cup sounds decadent and SO delicious!

    1. It was nice, as all weekends are, in my opinion! Rain, snow, or shine! I was just reading an article about the flooding in the midwest, and it made me think of you. I hope it dries up soon!

      I love, love this salad. I want to make my own peanut sauce in the future so I can make the whole thing on demand.

  3. Oh my that chocolate mousse looks good!! I'd really like to try Kombucha, I've seen it on lots of blogs. I'll have to see if it's available in the UK. The curried cauliflower is making me hungry!!! And I've just had lunch..... :)

    1. Hi! It's good, but quite sweet. Perhaps someone at the prep station was a little heavy-handed with the maple syrup?! I would imagine that Kombucha would be there, as it is fermented tea. Let me know if you find it! It's slightly unusual in taste, but the health benefits are what make it worthwhile. :)

  4. I love everything about your day!! Especially the fact that it was 60 degrees and you got to enjoy a beautiful day :)

    All of your food (and drinks!) look great! Bagel and coffee is perfect in my book. The salad sounds so delicious! the mousse cup looks like a perfect treat! Definitely a good sweet emergency backup :) Oooh those black beans, yum!!!

    1. Thank you, Sarah! A bagel and coffee is always a win, ha ha! The mousse is super sweet so it'll only come out of the door in dire times. ;) Black beans are great for making means last all week.

  5. Yeah mousse can sometimes be super intense! Chocolate Covered Katie has a version here (http://chocolatecoveredkatie.com/2012/02/06/chocolate-chocolate-chocolate-mousse/) that I've made and it was incredible.
    The cauliflower looks great. I have some in my fridge right now for a recipe but if there are any leftovers, I really ought to curry roast them.

    1. I will definitely try Katie's version! I always love her recipes. Curried cauliflower is so good, and I love that they added peas to it, as well.

  6. Oh how I wish our local WF's would get that Vietnamese Noodle Salad. We've actually had the Vegan Chocolate Mousse at our WF's for many years, but the price has kept me from buying it very often. Glad you are pleased with sixty degrees. Good Remy walking weather.

    1. If it makes any difference, I had to go to two different Whole Foods to find the tofu version of this salad. This got me thinking that I should just make it at home. :)

      Remy went to the dog park - he needed off leash time and time to sniff other butts.

  7. I do love chocolate mousse a lot, but I'm kind of captivated by the curried cauliflower - is that wrong?!

    Which Tofutti is that by the way? I'm always tempted by vegan cream cheese, but there's always a sort of sweet coconut flavour in the background that puts me off. Maybe I need to dive in again

    1. This is the Tofutti Better Than Cream Cheese. Hmm. . .I've never noticed a coconut flavor before. I hope you enjoy it, as it is a necessary accompaniment to my bagel consumption. ;)
